The most spiritually evolved animal is the dolphin.
There is spiritual "proof" that suggests that dolphins, a great long time ago, were actually humans that had evolved the benefit of breathing water and air, dependant on which environment they were in at the moment, and as more of these human-fish creatures decided to stay under the water, they became less human and more water-dwelling creature. And at the end of it, the gift of choice was taken away. But in the now, dolphins are loving and healing creatures; stories are told of people who were emotionally and spiritually sick, and after close encounters with dolphins, "something changed." Sicknesses healed.
To further answer your question, the most spiritual animals are whichever ones touch you on that level. Some people say that birds are spiritual, but in my experience, every bird I ever had never suited that arguement. My cat however? Oh, yes. And this is because I am a cat person, not a bird person. My cat is quiet and contemplative- But not everyone sees cats as being either of those qualities overall. Dogs connect with people on a level that science cannot explain, and some people prefer dogs to cats, etc and this is why I say, whatever touches you. Spirit communicates through various forms, and who is to say that your pet canary isn't as connected to you as my cat is to me?

All animals are spiritual. I think we probably connect more with the domestics (cats/dogs/birds) and by doing so we can see that animals are very spiritual and can love unconditionally. What better definition of "spiritual" can you get??

Probably the lamb and the lion in the christian view. In my own spiritual path's view, I would say the spider, the owl, and the fish.

I know it is not an animal, but I vote for the Jerusalem Cricket (look it up on the 'net). I picked this one because every time I see one I say, "OH, GOD"!!!
