The ant.
The ant works only for the benefit of its community. When it finds a piece of food, its sole instinct is to bring it back to the colony so that all may partake of it. The ant doesn't waste its time worrying about whether God approves of its actions - it just does its job.
Ants are more ethical than we humans could ever hope to be.

God made that decision milliards(trillions of light years) ago and will not start creation of this earth again. This hypothetical question can also be answered this way.
Granted that God indeed decided to start creation again in our solar system, He would do the same thing as it is nowadays. And if I were Adam, Eve would deserve man's place on the new earth. That's the way it is and that's the way it should go.
Although, digressing a bit, from your question, God is, even until now, creating trillions of "earth-like" systems in the entire universe, every day.
As to God's creations and plans there is no end to it.
The Gods did not chose "man" in their own image and after their own likeness. The male and female Gods "delivered" Adam and Eve as their begotten son and daughter. They did not chose nor willed it. The Gods loved to have a son named Adam and a daughter named Eve, created in their own image and likeness.

Philosophically speaking if God did want to recreate anoter specie to watch over the earth he would still create "us" humans. Why? Look at all the other species around you in the a nimal kingdom. We're by far the one most capable of caring for the earth with our inate abilities and our intelligence. Maybe if he wanted us to be more caring of it though he would take away free will and act like an omnipotent despot that would give us a set of rules so as to take care of the world the way he wants us to. But then again that would not be man

If GOD arbitrarily chose man, then this queston has some validity. However, if you are Christian, then it is clear that GOD did not arbitrarily choose man to be in "Our image".
The short answer is that HE would chose man, again.
