This is the way I do it and I live in Georgia we have lots of peaches

Boil some water in a large pan, gently place peaches in to loosen the peels. Immediatly put in cold water to stop any cooking action. Peel off skin. Slice peaches, put in a large bowl. Sprinkle with Fruit Fresh according to directions on the jar. Put in ziploc bags, or platic containers. Freeze. The Fruit Fresh is just a vitamin C powder that keeps them from turing dark. You can make a syrup and freeze them in it, but is not neccessary. Also, you can freeze with sugar, but it is up to you. Just sweeten to taste before you putin the bags or containers. If you freeze without sugar, you can defrost and make jam later. Peach jam is great!

Cut peaches in slices, place in a single layer on a cookie sheet then freeze. When frozen put in a freezer bag.

Look up how to "flash freeze" produce on the net. It will ensure that you do not end up with a mushy mess when you go for them the next time you need them. I think this info can also be found on Alton Browns "Good Eats" portion of the Food Network site. Good luck!

put it into a freezer and it will freeze

my mother used to just slice em and throw em in the freezer... but i think you may have to boil em first... make sure you bag them!

i guess it don't matter how ya do it,cause once frozen there not gonna be fresh anymore.
