Escargot and Mushrooms
INGREDIENTS:
1/4 cup butter, softened
1 large clove garlic, crushed and minced
12 large mushroom caps
2 cans snails, about 24 snails
1 to 2 tablespoons grated Parmesan cheese
1 to 2 tablespoons finely chopped parsley
PREPARATION:
Combine butter and garlic. Spread half of the butter mixture in the bottom of a shallow baking dish. Place mushroom caps in pan, dotting each equally with remaining butter and garlic mixture. Fill each mushroom cap with 2 snails; sprinkle with a little Parmesan cheese and the parsley.
Broil 5 inches from heat for 5 minutes, or until snails and mushrooms are heated through.
Snails recipe serves 4.

I don't know about cooking these things but I've heard they're very nice lightly fried with garlic and herbs. There's no way you'd ever persuade me that snails can be eaten though, yeuck!

You can cook them a few different ways, steam them or saute them or even in the oven. Just add some garlic butter and you good to go. Don't over cook them, they are like squid if you overcook them they are rubbery and not very good.

one very simple recipe,
in a small saute pan heat melted butter and fresh chopped garlic , careful not to burn the garlic, add the escargot, and bring to temp( overcooking will cause your snails to turn into very tuff rubber)

Saute in butter with a little onion, garlic, and white wine. Then add a dash of cream to the wine, season well and sprinkle with freshly chopped parsley.

Best way is to gently steam them in some white wine for a few mins, then serve with garlic butter. Yum.

boil in salted water take out of shells chop in half fry with shallots garlic bacon lardons toss in mixed salad leaves with rasberry vinagrette and serve
