i think for you its just a matter of readjusting to the timing. take the day as your night, and take the night as your day. eat normally, but with your new readjusted timings for your meals.
that way you still get your proper nutrients, proper rest. only thing your night is day!

I work nights, too. 6 days on, 3 off. 8 hour shifts. I work from midnight to 8am, and sleep till around 5-6pm. It means my meals are all screwed up. I typically make a nice dinner for myself or go to eat at my mother's house when she's got dinner ready a couple nights a week, and then ensure that I have leftovers and something like fruit for 'lunch', which I eat around 2am. 'Dinner' turns out to be 'breakfast' type foods when I get off work, right before I go to bed, and usually doesn't amount to much.
But you could vary that - eat a breakfasty type meal before work, take 'lunch' - sandwich, salad, whatever you like - with you and eat there, and... since you work a 12 hour, and i'm not sure what your schedule is, but you may have to bring dinner as well.
You could also try the six small meals a day thing - bring a lot of small fruits and veggies and sandwiches and stuff and eat 3-4 times during those 12 hours.
It's hard. I know. My biggest problem is actually fitting in 3 meals a day. Often, by the time I get home from work at 8am, I just want to crash.

since you work such long hours, this will be hard for you, but it can be done. you work 5 days a week, so, on your 1st day off, make a menu for dinner for the following week. make a list of what you will need. go shopping for the items you will need. on your 2nd day off, cook your dinners for the following week, and freeze 3 or 4 of them. when you go shopping, make sure you get what you will be taking to work for lunch, such as fruit, veggies, bread and lunchmeat. get what you will want to eat for breakfast too. for your dinners you can actually cook and freeze enough for 2 or 3 weeks in advance. come monday night, if that's when you go back to work, get up and have your breakfast. pack your lunch. take your dinner out of the freezer, and heat it when you get home, adding a salad. you still have to eat as if you worked days. you have to eat healthy too, since you work long hours. i hope this helps you. i work nights too, and it's just weird.
