I need a side dish or light entree. My neighbor likes to make desserts for these things so I don't want to bring anything that might "compete"--she's sensitive! Another neighbor is bringing potato salad. I have spaghetti, macaroni, velveeta, shredded cheese, rice, some frozen vegetables, onions, peppers, garlic, lots of spices/herbs and about two hours of prep time if I have to hit the grocery.

Go out and get some fresh tomatoes, fresh mozzarella cheese (in the water) fresh basil and some good olive oil. Slice the tomatoes and the mozzarella, chop up the basil. Take a large plate and lay the tomatoes out. Put a slice of the mozzarella on each of the tomatoes. Drizzle the tomatoes with olive oil then sprinkle them with the chopped basil. A few dashes of salt over the whole platter, a little fresh pepper as well and you will have an easy and unique tasty platter. Great for a Bar-B-Que

Coleslaw is always a good stand by, but for something a little different I like to make marinated tomato salad. Chop up several tomatos fresh from the garden. Chop up 1 large onion ( I prefer red for the colors ) and a couple of cloves of garlic. Add some of Paul Newman's dressing parmesan & roasted garlic flavor & let sit in the fridge for at least 45 minutes so flavors will mix. Tastes great & looks pretty on the picnic table as well.......

Bar B Q Sauce !

1/2 cup ketchup
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon cider vinegar
1 dash hot pepper sauce
1 teaspoon garlic powder
1/4 teaspoon mustard powder
1/4 teaspoon salt
sure to love it!

Something that is easy to make is Green Bean Casserole.

I'll use the basic portions, multiply depending on the amount of people to feed:

2 cans of cut green beans
1 can of cream of mushroom soup
1/2 cup Chopped bacon or bacon bits

Mix together in a small baking dish. Place in oven at 350 degrees for 30 minutes.

I say make some coleslaw too:-)

1/2 cup sugar
1/2 cup vinegar
1/4 cup milk
1-2 cups mayo
salt and pepper to taste
1 large head of cabbage
1-2 carrots,grated

combine sugar, vinegar, milk and just enough mayo to make dressing consistency. add salt and pepper to taste.
peel outside leaves of cabbage, wash and chop finely in food processer. Grate carrots and mix with cabbage. Mix dressing and cabbage well, cover and refrigerate.

Go to the store and buy shredded cabbage and a bottle of coleslaw salad dressing. Mix the two together and there you have it . Quick and easy.

I vote for the coleslaw. Nobody else is bringing any and just as many people like to put coleslaw directly on a BBQ sandwich as eat it on the side.

depends on time of day & weather-how much protein will be un-refridgerated i.e eggs, mayo. dogs, beef. try a new fad mexican like 7 layer dish with t-chips in clear plastic bowl--recipe on foodnetwork yesterday. you do snacks & let them do dessert & salad. awesome dish
