i want to cook this confit duck dish, and it says i need goose fat. never even heard anyone use this in their cooking. i live on the gold coast, queensland, australia. know where i can get it? if not what would be a suitable substitute?

Our big grocery stores in Aus..(or atleast where i live) don't stock stuff out of the ordinary, so they don't have it.

i don't have acces to a goose, and wouldn't want to extract it myself anyways. i want to buy it!
what can i say, i have the money.

Geese are filled with it!

No geese? Maybe substitute fat from another bird. Since you are making a confit it probably won't work out too well though. Perhaps you can find a butcher shop? Ask them to find some for you.

Despite all the jokes, if you find goose or duck in your supermarket, treat yourself by placing it on a trivet in a pan and roasting it. You'll get your goose fat as a byproduct. A medium sized duck probably yields half a pound of fat.

BTW the guy who said about roasting potatoes in goose fat is absolutely right.

From a goose.... forget the supermarkets / Big grocery stores, try a small independent butcher shop if there's one nearby.

Just have a proper diet rich in fiber and protein and try to cut all the unhealthy stuff from your diet atlhough its good to enjoy. Dont binge on unhealthy stuff any other time. You should also exercise 3-5 times a week and you should definitely see results in a couple of weeks. Learn more here:

I do not know , but I am watching this question , HOPEFULLY, for an answer.
If you are proficient of a chef to cook that dish then you understand that there is NO substitute.
Try ,in New York, ON line , or whatever.., BALDUCCI"S.
Maybe one of the best store to shop for your culinary needs.
