I love deviled eggs and it makes me very frustrated every time I make them because no matter what I try it seems that the shells want to
stick to the egg and then my deviled eggs look all chewed up on the outside.

Don't use fresh eggs right from the store. Let the eggs that you plan to boil and peel sit in your refrigerator for at least a week. Then boil them.

Don't put them directly in the boiling water out of the fridge. Let the eggs sit on the counter for around twenty minutes so they are room temperature. Put them in boiling water, slowly, cook them for the proper time starting from when the water boils rapidly. Sometimes the membrane hasn't separated from the egg and shell. Wait for them to cool down before you start to peel. The membrane has to shrink away from the shells. Cool water may help. Ten eggs in a pot will take a little longer to cook than putting two in a pot.

After you take them off the stove, run hot water in the pan, then gradually make the water cooler and cooler, until you are running cold water in the pan. Let them sit for about 5 minutes in the cold water. That helps loosen the inner membrane, which is what makes the shell stick.

Also, while peeling them, run them under a gentle stream of cold water. It further helps keep the inner membrane from sticking. And when you go to peel them, crack them gently, then roll them very gently on the counter. That will create an entire network of small cracks, which will make peeling easier. If a piece seems stuck, try and find the membrane, and pull that away, which should help pull the shell away, as well.

ust in case your mother never explained this to you, here are the simple steps involved in boiling an egg.

Steps:
1. Place the egg in a saucepan.

2. Run cold water into the saucepan until the water is 1 inch above the egg.

3. Place the saucepan on a stove and cook over medium heat until the water begins to boil.

4. Reduce the heat to low.

5. Simmer for 2 to 3 minutes for soft-boiled eggs or 10 to 15 minutes for hard-boiled eggs.

6. Remove the egg with a spoon or ladle and let it cool slowly, or run cold water over it to cool it more quickly.

Put the pan and all in the sink and let the cold water run over them. Crack all the shells slightly under the water in the pan and let sit for a few minutes. The water seeps in between the egg and the shell. Peel in the pan under the water, be gentle and it should work just fine!

Boil in salted water for 10 min after water begins to buil, remove from heat place pan in sink run cool water over eggs and peel immediately. don't allow the eggs to become cold. I peel them steaming if too hot to handle just peel while water is running. Good Luck!

1.) Boil water for 6-10 min.
2.) put the eggs in the pot.
3.) wait for couple of min.
4.) cool it for sometime and
TADAAN! the shell will peel off automatically....

Have you tried putting the eggs in ice water to cool after boiling? that will help to the eggs to shink from the shell, for easy peeling..
