I've only had plan SPAM sandwiches with fried SPAM, cheddar cheese and mayo, not to bad. Especially when you are hungry and broke.
What's so funny is that SPAM is a state meat in Hawaii, and it is even on the McDonald's menu there. They have a SPAM festival and everything! Check out some of the Hawaii sites for recipes.

I live in Puerto Rico and Spam is really big here because it keeps forever and is fairly versatile. My favorite thing to do is to cut it up into slices and fry it like bacon, eat it with eggs and pancakes. You can also cook it with rice which is delicious (if you cook your rice the "old fashioned" way in a pot on the stove). It can be cubed and used in place of ham in omlettes, salads, beans, etc. Some people here make it into a ball and combine it with cheese and other things to make a spread for crackers. I've also had in on sandwiches, which was pretty good. Hope some of this helps, you can probably also visit their website ( http://www.spam.com/ ) for more ideas.

Spam fritters! My Dad loves them. Make up some batter (buy a packet or use the type you would to batter fish). Fry until golden, great with baked beans, real student food! May be in this health conscious age you should eat them with some green stuff?

When Fluffy my dog was a puppy, I would chop up spam, add lots of garlic and ginger and fry them in chopped tomatoes for him. You have brought back memories. They are great is you live on a boat and you take your pet along.
