You'ld have to eat an awful lot of carrots to get fat from them. Like all vegetables, they're mostly water, rich in nutrients.

Absolutely not. Any raw, fibrous vegetable is so difficult for your body to absorb energy from that it has a net loss of energy from eating it. Carrots, celery, lettuce and other green leafy vegetables, green pepper, onion, okra, collard greens etc.....these things give a net LOSS in calories when you eat them. And you should eat these things.....preferably lots of them.
But, these are not the only things good for a diet. Get the book, The GI Diet:
http://www.gidiet.com/
This simple to use book, classifies foods as red, yellow or green light. A diet that successfully results in weight loss is as simple as eating only green light foods. What makes a food "green light"? Basically, it is low in calories, low in fat or high in good fats, and has a low glycemic index and is as unrefined as possible. Certain of the green light foods need to be eaten with common sense portions. But, the foods I have listed above, you can eat as much as you can shove down your throat and not worry about it one bit.
