Cheese Crackers

1 cup flour
2 tsp dry mustard powder
1/4 tsp cayenne
1/2 tsp paprika
1/2 tsp thyme
1/2 tsp chili Powder
1/2 tsp salt
1/4 cup unsalted butter
2 cups aged cheddar grated
1/4 cup cold water

Preheat oven to 350. Combine mustard powder and seasonings with the flour and mix well. Cut butter into the flour mixture. Add grated cheese to the flour and mix well. Add the water and knead for a short time until the dough forms a ball. Take one quarter of the dough at a time and roll out very thin (about 1/8 inch). Cut into crackers, ***** the tops with a fork, and bake on a greased cookie sheet for about 10 minutes or until lightly browned. Put into a container and allow to sit overnight uncovered


Bourbon Chicken

1 lb chicken thigh meat cut into large bite size chunks
1/2 cup soy sauce
1/2 cup brown sugar
1/2 tsp garlic powder
1 tsp powdered ginger
2 tbsp dried minced onion
1/2 cup Jim Beam Bourbon whiskey
2 tbsp white wine

Mix all the marinade ingredients and pour over chicken pieces in a bowl. Cover and refrigerate stirring often for several hours (best overnight). Bake chicken at 350 for one hour in a single layer basting every 10 mins. Remove chicken Scrape pan juices with all the brown bits into a frying pan. Heat and add 2 tbs wine. Stir and add chicken cook for 1 min and serve.
I serve them on tooth picks for appetizer, plate is clean is seconds!!


Asparagus Chicken Puffs with Curry - makes 48 puffs

1 lg chicken breast filleted and cooked
2 tbsp mayonnaise
1/2 to 1 tsp curry powder
Salt and pepper to taste
14 oz. pkg. puff pastry
12 oz. can asparagus well drained
1 egg beaten
Sesame seeds

In a food processor, blend chicken, mayonnaise, curry, salt and pepper until smooth. Roll pastry into rectangular shape, 10" x 14". Cut lengthwise into 3 even strips.
Spread chicken mixture along one side of each strip of pastry. Place asparagus spears lengthwise beside chicken mixture. Brush edges of pastry with egg.
Roll pastry over to close completely. Brush top with egg, cut rolls diagonally into 1" pieces and sprinkle with sesame seeds. Place on greased cookie sheet and bake at 450 degrees for 10 minutes. Lower oven to 350 degrees for another 10 minutes or until golden brown.


Cheese Wafers - serves about 2 dozen

1/2 pound butter, softened
1 cup flour
1/4 tsp cayenne pepper
1 cup chopped pecans
2 cups grated cheese
Salt to taste

Combine all ingredients, make two rolls about 1 1/2 inches in diameter. Wrap in foil and refrigerate at least 8 hours.
Preheat the oven to 375 F. Slice the dough into thin wafers and bake 6-10 minutes, depending on the thickness of the wafers.
Watch closely to see that they do not burn.


Fried Cheese Balls - serves 15 small balls

1 cup grated mild cheese
2 tsp flour
1/4 tsp salt
1/8 tsp cayenne pepper
2 egg whites, stiffly beaten
3/4 cup fine cracker crumbs
1/2 vegetable oil

Combine the cheese, flour, salt, and cayenne pepper. Using your hands, gently stir in the egg whites. Pat the mixture into small balls and roll them in cracker crumbs until thoroughly coated.
Heat the oil in a skillet, when it is hot, put the balls in the pan without crowding them. Cook over medium-high heat, turning so all sides become golden brown. Drain on paper towels.
Serve hot or cold, with a salad or with pre-dinner drinks.



Ginger-Mustard Chicken Wings

24 chicken wings, separated, tips discarded
2 cup soy sauce
2 tsp pprepared mustard
2 tsp freshly grated ginger
1/2 cup sugar
2 tsp finely chopped garlic

Combine soy, mustard, ginger, sugar and garlic, stir well, then pour over chicken wings.
Cover and refrigerate over night
At serving time heat oven to 350 degrees and bake for 1 hour.



Macho Nachos

Cayenne pepper-sauce
1 can prepared bean dip (9 oz)
Nachos or tortilla chips
Shredded cheddar cheese
Guacamole dip (prepared)
Sour cream
Sliced jalapeno peppers

Stir 1 tbsp of cayenne pepper into the bean dip and spread on chips. Sprinkle with cheese and microwave until softened. Top with guacamole dip and sour cream; garnish liberally with sliced jalapeno peppers.


Nachos - serves 30 canapes

5 ounce bag tortilla chips
1 pound Cheddar cheese, grated
1/3 cup chopped canned peeled green chilies
1/2 cup chopped onion

Preheat the oven to 400 F. Lay the tortilla chips on a cookie sheet. Toss together the cheese, chilies, and onion, and sprinkle over the tortilla chips.
Bake for about 5 minutes, until the cheese has melted.
Serve hot.



Sherry-Mushroom Caviar

1/4 cup shallots minced
1 tbsp margarine
2 tbsp vegetable broth
1 lb fresh mushrooms, minced
2 tbsp dry sherry
1 tbsp fresh parsley minced
1/2 tsp dried whole thyme
1/4 tsp salt
1/8 tsp pepper

Saute minced shallots in margarine in a large nonstick skillet over medium high heat until tender. Add broth and fresh mushrooms, cook over high heat 5 minutes or until all liquid evaporates, stirring constantly. Add sherry, and stir gently. Stir in fresh parsley, dried thyme, salt and pepper. Remove from heat and allow mixture to cool.
Pack mushroom mixture into a small crock or container and chill at least 2 hours. Serve with toasted french bread rounds.



Swiss Cheese Spread - serves 2 1/2 cups

1/2 cup mayonnaise
2 cups grated Swiss cheese
2 tbsp finely chopped parsley
Crackers

Mix the mayonnaise thoroughly with the Swiss cheese, using enough mayonnaise to make it spreadable.
Put in a bowl just large enough to hold it, cover with plastic wrap and refrigerate. When ready to serve, turn out onto a platter and mold into a mound using your hands.
Sprinkle with the parsley and place crackers around mold.

1 pound pork sausage
1 pound ground beef
1 pound Velveeta cheese cubed
1 jar pizza sauce
2 loaves party rye bread

Cook meats and drain. then melt velveeta and sauce in with meat. Put some on a piece of the party bread and bake them on 350 or 400 degrees for around 10 minutes.

Simple, cheap, and good.

You can take any ground meat you want: turkey, beef, pork, etc... and season it any way you want; garlic, onion, carrot, water chestnut, etc... and brown it all up together, drain the fat. Then you take the little wonton wrappers that you get in the Asian food section of most grocery stores and you put a teaspoon or so of the meat in the center of the wonton wrapper and fold it in half and press the edges down. Then put them in a hot pan with a bit of oil to brown them, once they are browned put a 1/4 cup of water in the pan and cover to let them steam, this cooks the wonton wrapper through. Enjoy!

PREPARATION:


I find the following to be a real crowd pleaser: I take about half a bag of those great frozen meatballs from Sam's Club and dump them into the slow cooker/Crock Pot. Then I take 2 packages of brown gravy, mix them up according to the directions and then pour over the meatballs.

Heat on low for 4 hours or so and you have instant

right that's considered one of my well-known recipes. you need to use the chicken salad as a filling for finger sandwiches. SJ-SC-CA mind-blowing chicken Salad 3 cups chicken breast (cooked and cubed) a million cup pineapple (diced) a million/2 cup celery (diced) a million/2 cup mayonnaise a million/4 cup raisins a million/4 cup walnuts a million/8 cup dried cranberries 2 Tablespoons candy onion (minced) 2 Tablespoons apple juice combine all aspects in a bowl till properly mixed and chill out. Serve with a lettuce garnish. ***you need to use the chicken salad as a sandwich filling.***

I've been making these for years with great success - enjoy!!

REUBEN DIP

8 oz. cheddar cheese, grated
8 oz. swiss cheese, grated
8 oz. turkey pastrami, diced
32 oz. sauerkraut, well drained
¾ cup mayonnaise

Mix all ingredients together, put in casserole dish, and bake at 350 degrees for 30 minutes. Serve with Club Crackers.

PINEAPPLE CHEESE BALL

16 oz. softened cream cheese
½ tsp. Accent
½ tsp. garlic salt
½ tsp. finely chopped onions
¼ cup finely chopped green peppers
¼ cup well-drained pineapple
1 cup chopped pecans

Mix all ingredients except pecans. Form into a ball and put in refrigerator until firm. Roll in nuts.

DILL DIP AND BREAD BOWL

1 round loaf bread (unsliced) - I like the dark pumpernickel

For the dip:
1 cup real mayonnaise
1 carton (12 0z) sour cream
2 Tbsp. parsley flakes
2 Tbsp. onion flakes
2 tsp. dill seed (not dill weed)
2 tsp. bon apetit (McCormick brand seasonings)

Mix dip ingredients together (can use immediately, but is much better if you make a couple hours ahead and chill)

Hollow out bread to make a bowl and tear into bite-sized pieces. Pour dip in bread bowl and arrange bread pieces around bowl to use for dipping.

melba toast, spread on cream cheese mixed in with your favorite herb like dill or garlic or basil, top with cucumber slice or tomato. or block of cream cheese, pour jam or chili on top and serve with crackers. or spread the herbed cream cheese on canned crescent rolls, roll up and bake...yummy i like cream chz.
