Gosh some crazy advice here from others.
Dont do any thing weird.
Could be a simple reaction to hand soap or lotion.
could be an allergic reaction to something else.
May also be exzema, acommomn skin problem showing up on the hands most of the time.
Could be scabbies, another common skin problem.
Could also be a bacterial skin infection.
I would keep it clean and dry. do not cover it or put any thing on it.
Call you r Dr. and have them take a look at it.

When I was younger I had this happen. My Palms would peel but not the back of my hands. They itched too. Ask him if his hands were itching before or after it start. Never went to the Doctor and it go away to come back another day. I did work on cars and assumed it may have been a reaction to the Grease/oil. After I got older it stopped. You have two choices; Go pay a Doctor a bunch of money for his opinion or wait until your son older and it go away. I figure it a type of reaction to something that in time the body build immunity. Hope this helps.
Seeing some whine Doctor and Creams I do want you to know this. A Real Doctor will tell you the same. Many times when we use Drugs/Whatever our body will become dependent on the Drug/Whatever to solve the problem. In time when the Body allowed to develop it's own immunity you be much better off. A REAL Doctor that good will tell you this. He make his money on being good not trying to keep repeat customers like some Auto Mechanics do. This happen in most everything though. There the Professionals and the the Schemers. Hope this helps.

I have seen two things that resemble what you describe. (many more I'm sure, I've just seen a couple)
1. My daughter had strep throat that turned into scarlet fever. When the fever goes away, the hands and feet peel.
2. Palmer pustular psoriasis. Itches and has small bumps that look like blisters filled with puss. When severe can peel in pretty big layers. Can be on the feet too.
Definitely would see a doctor.

The obvious answer of course is for a Dermatologist to have a look at it. It sounds as though it could be a dermatitis infection of some sort, perhaps Eczema or Psoriasis. I had a similar condition years ago where the skin actually would crack and bleed. Mine was caused by exposure to certain chemicals like Acetone and MEK where I didn't have the proper glove protection and caused a "defatting" of the skin. It has since cleared up, but at the time was extremely bothersome and painful.

I've had friends that have had this happen. After a while its painful, because the skin is sensitive. You need to take him to a dermatologist. The will probably give you some sort of cream to put on him. In the mean time, try washing his hands with a moisturizing soap, use something like baby oil gel, then have him wear mittens (do this at bed time, then see how he is in the morning) its possible he just had really dry skin. Or it could be an advance stage of eczema

this happened to me when i was like 10 years old and it just went away on its own now I'm 20 and it started happening again. it looks like when you put glue on your hands and let it dry and then start peeling it off. i still haven't figured out what it is but once again its starting to go away on its own. i feel like some weird creature that sheds its hand skin once every ten years. if it happens again when I'm 30 I'm really going to be freaked out.

It's most likely to be a fungal infection..some of us are more prone to get it than others, including myself. I got it in my 20's when I was doing lots of laundry for my babies. Take him to a dermatologist and they'll give him the appropriate anti-fungal cream.

It could actually be a number of skin conditions or something as simple as excessive hand washing. You need to take him to a dermatologist to have his particular condition diagnosed so that you can get him the proper treatment as soon as possible.

It is athlete's foot fungus! Type to have him us an antifungal cream twice a day. If untreated, it will spread to his finger nails and unsightly nail fungus. Garlic tablets daily help also, as does Noni cream, but just your basic Walmart brand antifungal cream is a good start, everyday!!

I dont know why but that has happened to my brother before and it was weird but it went away and was no big deal. I never saw anything like it I thought it would be serious but ended up as just going away and not comming back. huh but you could ask a doctor I guess.
