would like to know all kinds to make mild, hot or whatever

12 plum tomatoes, coarsely diced
1/2 cup chopped cilantro leaves
1-2 cloves garlic, finely chopped (use garlic press if available)
2 tsp. vinegar or 1 tsp. lemon juice
1/4 cup finely chopped onion
1 small chili pepper, add to taste (habanero is best)
1 tsp salt and pepper, or to taste

hmm.. hope u have fresh tomatoes. use roma (plum) tomatoes, because other tomatoes are too watery for salsa

the trick to making the best salsa is, you want the tomatoes to dominate the flavour and not compete with anything else. u want all other ingredients to enhance the tomato flavour, but not to be prominent. chop all the ingredients, and do not put anything into blender!! that totally ruins the show.

another good salsa uses tomatillos, called "green" salsa. use all the same ingredients as the regular kind, substituting tomatillos for tomatoes.

I make salsa every summer with veggies from my garden and all my friends and relatives want some. It freezes very well and nice to have in the winter....very easy: all ingredient are "to taste", add however much you like!!
I blanche and peel about 25 tomatoes and squeeze out the pulp and seeds. then I dice them up and simmer them until they are mushy (about 45 minutes), and most of the liquid is boiled away.
Then add diced onions, celery, green pepper and jalapenos (a couple for mild, more for hotter) and add a tablespoon of sugar, a tablespoon of vinegar, a tablespoon of cilantro and a little can of tomato paste. Simmer it again until the onions are transparent.
Put 1/2 of the mixture into a blender and puree.
You can freeze this and it even taste better months later. My daughter says it tastes just like the kind you get at the store.

you mean like a Salsa Fresca?

1/2 red onion, small dice
1 cup cilantro, stemmed and chopped
2 fresh jalapenos, chopped (can be seeded to make mild)
3-5 limes, juiced
3-4 tomatoes, medium dice
1/2 orange or yellow bell pepper, small dice
1 T minced garlic
1 T olive oil
kosher salt & fresh cracked pepper to taste

Serve after flavors have married!

o.k. try this
2 jalapeno peppers, or serrano pepper (if you like super hot)
1 bushell of cilantro
3 large tomatoes
1/2 an onion
garlic powder
salt and pepper to taste

Chop up tomatoes, jalapenos, onion and cilantro. Put it all in a handi-chopper or blender. Add some garlic powder and salt and pepper.

That should do it!

CHOPPED plum tomatoes, onion ( I prefer Vedalia when available), jalapenos (remove seeds to make not too hot), table spoon lime juice , chopped garlic & yellow bell pepper( for color). DICE all ingrediants. don't mash or mix in blender. Add celantro. Chunks is so much better. and is not like the tomato paste junk you buy in stores. Serve with "SCOOPS" taco tostada chips. You'll find them!.
