I love all kinds, but especially artisinal. The soft and creamy, the hard, the stinky. You have to find a great cheese counter in a specialty shop, where they let you taste and they can give recommendations. YUM.

In the hard category I love aged White Cheddar because I don't like tumeric that much, I love Parmigiano Reggiano "The undisputed Cheese Of Cheeses" (the real stuff not Kraft) and soft category, the one I would go the extra mile for Blue Cheese. Awesome on a steak.

Yeah, you can never use too much cheese. I like pepper Jack cheese, American kraft singles, longhorn, cheddar and velveeta for cooking. I don't like velveeta on a sandwhich unless it's a grilled cheese.

Two favorites, Havarti, and Caraway Cheese. My grandparents are from Holland and owned their own Deli. Cheese from Europe is the best, there is no comparison to American.

I like most all except for a very few. Some cheeses cannot be used in cooking because they curdle.
