HONEY Honey will thicken and crystallize if stored in the refrigerator, even after opening. If this does happen, you can place the opened jar of honey in a pan of hot water and it will return to a pourable, smooth texture.

The honey crystallizes and then you have crystal grit that makes in unpourable (that doesn't even look like a word). Then you have to scoop it out of the jar and melt it in a pot to liquefy it again. There's no danger involved in refrigerating it, only inconvenience.

It will make the honey crystalize faster.
You can melt it again by heating it on a very low heat but be careful not to warm.
It really does not need to be kept cool.
It stays fine in the bottle in the cabinet. I keep a large bottle and never have kept it in the firdge.

It will get hard and you will have to wait until it thaws before you can use it. Furthermore honey does not spoil and there is no need to refrigerate it.

well i know that refrigerating it makes it really thick and it won't come out of the bottle if it's cold. Other than that , I don't know.

It won't pour as well. And I believe it can cause crystalization, too.
