2 medium avocados, peeled, pitted and mashed
1/4 cup PHILADELPHIA Cream Cheese Spread
1/4 cup finely chopped tomato
2 Tbsp. finely chopped onion
2 Tbsp. lime juice
1 clove garlic, minced
1/8 tsp. salt
Dash of black pepper
MIX all ingredients until well blended.
SERVE with tortilla chips.
15 Minute Chicken Soft Tacos
1 Tbsp. oil
1 lb. boneless skinless chicken breasts, cut into strips
2 cups water
1 cup TACO BELL HOME ORIGINALS Thick 'N Chunky Mild Salsa
1 pkg. (1-1/4 oz.) TACO BELL HOME ORIGINALS Taco Seasoning Mix
2 cups MINUTE White Rice, uncooked
10 TACO BELL HOME ORIGINALS Flour Tortillas
3/4 cup KRAFT 2% Milk Shredded Reduced Fat Cheddar Cheese
HEAT oil in large nonstick skillet on medium-high heat. Add chicken; cook and stir 6 min. or until cooked through.
ADD water, salsa and seasoning mix; stir. Bring to boil. Stir in rice; cover. Reduce heat to low; cook 5 min.
SPOON chicken mixture evenly onto tortillas; sprinkle with cheese. Fold up sides of tortillas to enclose filling.
Fresh Guacamole

1 small ripe Haas avocado
1 tablespoon minced jalapeno pepper
2 tablespoons minced red onion
1 tablespoon chopped cilantro leaves
1/2 lime, juiced
Salt
Halve the avocado and remove the pit with a sharp knife. Discard the pit. Scoop the flesh into a small bowl and mash with a fork. Stir in the remaining ingredients, season with salt to taste, and set aside.
Yield: about 2/3 cup

This is my recipe for guacomole and it's really tasty.
3 guacomole--diced
2 limes--juiced
1 small red onion--minced
1/2 tsp garlic
2 seeded tomatoes--diced (I also use a bunch of diced cherry tomatoes which are sweeter)
2 tsp cilantro (or more to taste)

GUACAMOLE DIP
2 avocados, peeled
1/3 cup onion, chopped
1/2 jalapeno chile pepper, chopped fine
1 medium tomato, peeled and quartered
1 tablespoon lime juice
1 1/4 teaspoons sugar
1/4 cup sour cream
Prepare all ingredients. Place the avocados, onions, jalepeno, tomato, and lime juice in a food processor and process on pulse till blended. Add sugar and sour cream and mix well. Place pit from avocado back into bowl to prevent browning.
If you want a chunkier guacamole, mash the avocado by hand with a fork, then add the other ingredients.
MEXICAN GUACAMOLE
2 medium avocados
1/2 tomato, chopped
1/4 onion, minced
squeeze of lemon juice
garlic powder
salt

1/2 jalapeño, minced

CHICKEN SOFT TACOS
1 pkg. tortillas
1/4 c. vegetable oil
2 c. tomato, chopped
1 c. onion, chopped
2 fresh Jalapeno peppers, chopped
Salt & pepper to taste
4 c. cooked chicken, shredded
1/2 tsp. each of thyme & cumin
3/4 c. chicken broth
2 tbsp. chopped fresh cilantro, if desired
Heat oil in large skillet, add tomato, onion and peppers. Heat for 3 minutes; stir in chicken, thyme, cumin, and broth. Add salt and pepper to taste; simmer 15 minutes. Before serving, stir in cilantro, if desired. Heat tortillas according to package directions and place in warmer, or in microwave to heat. Serve with above mixture
SOFT CHICKEN TACOS
12 flour tortillas
3 c. diced chicken
1 lg. onion, chopped
1 (8 oz.) sour cream
1 (10 oz.) can cream of chicken soup
1/2 tsp. garlic salt
1/2 tsp. cumin
1/2 c. melted butter
2 (4 oz.) cans chopped green chilies
2 c. milk
1 (8 oz.) shredded Monterey Jack cheese
Preheat oven to 350 degrees. Saute onion, chicken and 4 oz. chilies in butter. Season with garlic, salt and cumin. Spoon chicken mixture into flour tortillas, roll tacos. Combine soup, milk, 4 oz. chilies and sour cream. Pour over tacos. Bake 30 minutes. Top with grated cheese, return to oven long enough for cheese to melt. Bake in a 9 x 13 inch pan.
