Can someone help me? I need a beer batter recipe for coating fish...a simple recipe if you could.

Try this recipe out, it works well with onion rings as well:
1 beer / warm and flat is best ( if in a hurry just use it )
1 egg
1 tablespoon baking soda
1 tablespoon salt
1/2 tablespoon pepper
1 1/2 cups flour
........add a bit more flour if your batter seems too thin *
This batter can be made ahead of time and kept refrigerated
A tip is to lightly coat the items to be battered with corn starch before dipping them into the batter.

* extra large eggs and cold beer can cause the batter to be thinner than normal

I usually do this without a recipe , I get 1 bottle of beer pour it into a bowl add a pinch of salt and flour just enough to make the a batter like the one for pancakes, I would say around 11/2 cups

I use this for catfish and trout:

Beat an egg or two with some spicy brown mustard and 1/2 bottle of good dark ale.
Mix some corn meal and a little pepper.
Dip the fish in the batter then the corn meal and fry.

Quick, easy, and tasty. I find that using corn meal rather than bread crumbs or flour for the breading goes better with a beer and mustard batter. But that's just a matter of personal taste.

BEER-BATTER FRIED FISH

6 brook trout or other fresh water fish (about 3/4 lb. each)
Flour
2 c. unsifted flour
2 tsp. baking powder
1 tsp. salt
2 eggs, slightly beaten
2 c. beer
1/2 c. salad oil
Oil for deep frying

Coat fish with flour; set aside. In a large bowl, combine 2 cups flour, baking powder, salt, eggs, beer and 1/2 cup oil; beat with rotary beater until smooth. Dip fish into batter, allowing excess to drip into bowl. Fry in deep hot 375 degree oil until golden brown on both sides. Drain on paper towels.


BEER BATTER FISH

This version uses a baking mix.

Oil for frying
1 lb. filets or lg. shrimp
1 c. plus 3-4 tbsp. biscuit mix
1/2 tsp. salt
1 egg
1/2 c. beer

Heat oil 1 1/2 inches deep to 350 degrees. Lightly coat fish with the 3-4 tablespoons of biscuit mix. Mix together remaining mix with salt, egg and beer until smooth. Dip fish in batter, letting excess drip off. Fry until golden brown, about 2 minutes on each side. Drain.

i saw this on one of the cooking shows and we really like it for fish and vegetables, its a tempura-like batter
1 or 2 cups of flour depending on how much you're cooking
while whisking add beer to desired consistancy, dip food and fry

here's what I use.
1 cup flour
2 Tbls cornstarch
1 egg
water or beer (flat)
Mix all ingred. until smooth

Insted, try soaking the fish in BUD over night.. Did that on a camping trip and everyong loved it.. I also cooked my rice in it.. Your friend from Tennessee...ROB
