Could you share your favorite recipes for scalloped potatoes? I want to make some for my parents who can't cook much for themselves. Thanks a bunch:)

I realize that they are a basic dish, but i wondered what some of you put in them that makes them special.

This is my FAVORITE potato recipe ever...they are so good I always make a triple batch...even for just 2 people!

BBQ Scalloped Potatoes

2 cups thinly sliced peeled potatoes
1 cup thinly sliced carrots
1/2 cup water
1/2 cup KRAFT 100% Grated Parmesan Cheese
1/4 cup MIRACLE WHIP Light Dressing
2 Tbsp. chopped fresh parsley
1 Tbsp. KRAFT 100% Grated Parmesan Cheese

PREHEAT grill to medium heat. Place potatoes and carrots in microwaveable bowl. Add water; cover. Microwave on HIGH 5 to 7 min. or until potatoes are crisp-tender; drain well. Mix 1/2 cup Parmesan cheese and the dressing. Add to potato mixture; mix lightly.
SPOON onto center of 20-inch piece of heavy-duty foil sprayed with cooking spray. (Or, use a double layer of regular foil.) Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Place on upper shelf of grill. Cook 15 to 20 min. or until vegetables are tender. Open packet carefully.
SPRINKLE potato mixture with parsley and the 1 Tbsp. Parmesan cheese.

Use Your Oven
Assemble potato packets as directed. Bake at 350°F for 20 min. or until potatoes are tender

P.S. For the carrots, I buy the matchstick cut carrots in a bag...they work great and it's less work for you!

Clean the potatoes and thinly slice them, then chop up some onions, cover the potatoes and onions with water in a pot, bring to a boil, turn down the heat and cook until tender, Pour the water off of them. Grate some cheese of your choice (cheddar is best) in a separate container. Mix the grated chess with a fairly big glop of butter, some cream(or milk--not to much -you don't want them runny)salt and pepper to taste--maybe a teaspoon of salt and a couple shakes of pepper. Stir and pour t5his mixture in the warm pot of onions and potatoes. Mix gently and let the cheese and butter melt. Although, you can serve the scalloped potatoes just like it is, you can make it a little tastier if once everything is mixed, pour the whole mixture into a baking dish, top with slices of cheese. Pop the baking dish in the oven until the cheese melts and begins to brown just slightly. Delicious! Good luck!

I buy the Betty Crocker box mix. They are awesome, really. Hide the box and your parents won't know that you didn't make 'em from scratch!
