The thing on top of the head is the comb. The things under the beak are wattles. The thing behind and below the eye is the earlobe.

Trivia: Chickens with white earlobes lay white eggs. Chickens with colored (usually red) earlobes lay colored (usually brown) eggs.

Both chicken and rooster have them. They are called a comb.
In the chicken, if it is brilliant pink to red and very large it means they are in laying season, if it is dull pink and shrivelled somewhat they are not in lay.
