My boyfriend loves grits, and i make them for him all the time. just lookin for somethin new to do with them.

Most important thing is to use regular - not quick cooking, not instant grits. Just to serve as a side dish with breakfast, cook the grits according to package directions take off the heat and stir in a stick of butter until it's melted, then beat in an egg - makes them really rich. Great with grillades! Another thing you can make is baked cheese grits. Make your grits on the thin side - to six cups of cooked grits add 1 lb shredded cheese (Velveeta works great for this!), 1 stick of butter, 1/2 cup milk and 3 beaten eggs. Mix well and pour into a 9x13 baking pan and bake at 350 degrees F for 50-60 minutes. The longer the grits cook, the creamier they get. You can serve this hot or let it cool and slice 1/2 inch thick slices and fry in a little butter. Serve some shrimp creole over the fried grits and your boyfriend will think you are a true gourmet!

In Texas my mother occasionally served grits as a substitute for mashed potatoes.Try beef roast with the natural gravy atop the grits. WOW ! Or, southern fried chicken with the pan cream gravy over the grits.She also served it as a hot cereal for breakfast with sugar and cream much like oatmeal or Cream Of Wheat is served in the South when it is cold outside.Memories are made of this !

Prepare grits enough for a bread loaf pan. Pour cooked grits, seasoned with salt, pepper and spices to your taste, into a buttered bread loaf pan. Refrigerate overnight. Turn out in the morning and slice very thinly, like thin bread ( the thinner the tastier), pan fry lightly on both sides. YUM (I used to add cooked mashed carrots and such to vary the flavor.

Add bacon grease after the dish is cooked and stir it in.

If you are in the south, look for yellow grits. They are creamier than white grits.

when i was a kid we ate grits with a overeasy egg on it, all the yoke spread in the grits, oh man that was good

Grits With Parmesan and Prosciutto
--------------------------------------------------------------------------------

INGREDIENTS:
3 cups water in a microwave-safe measuring cup
1 teaspoon vegetable oil
2 ounces thinly sliced prosciutto, minced
3/4 cup quick grits
1/4 teaspoon salt
1/4 cup grated Parmesan cheese, preferably Reggiano
1 teaspoon butter
Black pepper, to taste

DIRECTIONS:
Microwave water until very hot, 3 to 4 minutes.
Meanwhile, heat oil in a large saucepan over medium-high heat. Add prosciutto; saute until moisture evaporates and bits start to fry and crisp, about 3 minutes. Remove prosciutto; set aside.
Add the hot water to the empty pan and bring to a boil. Whisk in grits and salt. Simmer, uncovered, over medium-low heat until thick, about 3 to 5 minutes. Stir in prosciutto, cheese, butter and pepper to taste. Let stand to cool and allow flavors to blend, 2 to 3 minutes. Serve.

Or

Green Chile & Egg Grits:
INGREDIENTS:
6 cups water
1 1/2 cups dry grits
1/2 pound processed cheese food, cubed
1/2 pound sharp Cheddar cheese, shredded
1/2 pound margarine
1 teaspoon salt
2 teaspoons seasoned salt
1/2 teaspoon hot pepper sauce
1/2 teaspoon white pepper
3 eggs, beaten
2 teaspoons dried parsley
2 teaspoons fresh chives
2 (4 ounce) cans chopped green chile peppers

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x12-inch casserole.
In a saucepan, bring water to boil. Stir in grits, reduce the heat to low, and simmer until thick, about 10 minutes. Stir in processed cheese, Cheddar cheese, and margarine. Season with salt, seasoned salt, hot pepper sauce, and white pepper. Stir in eggs; cook, stirring, until well blended. Stir in parsley flakes, chives, and green chiles. Pour into casserole.
Bake in a preheated oven for 1 hour.
