Every Sunday morning was my dad's day in the kitchen. He made the most high cholesterol breakfast for us. First he fried up 3 or 4 pounds of bacon. Then with the inch or so of bacon grease in the pan, he cooked the eggs. Then we had this thick, handcut bread that his mom had made for us the day before and a Polish coffee cake that can't be described. It explains why Dad only cooked one day a week...took us that long to work off all those calories. But it was a very special time for us and a meal that I may not repeat for my own kids, but I do make Sunday morning a special time for all of us in the kitchen.

Fried chicken, mashed potatoes, gravy and corn (on the cob, preferably)

By the time I came along, my older sisters had taken over a lot of the cooking for my Mom. It didn't matter, because she showed them how to make everything.

My mom made homemade ravioli with a ricotta cheese and spinach filling. She made the dough from scratch, then kneaded it, rolled it out and filled it by hand. Before making the ravioli, she would put on a huge pot of pasta sauce with homemade meatballs, Italian sausage, a piece of beef and a hunk of pork. She would cook the sauce all day and the house smelled so wonderful! And those ravioli--so tender they just slid right through your mouth and down into your belly. I've tried numerous times to duplicate her recipe. I come close but it's just not the same as hers. Moms have that special touch!

Oh yes......... it all comes flooding back to me now.

We called it chudleigh dinner (recipe came from my Aunt who lived in Chudleigh, Devon) and it was basically a sausage casserole with onions and a layer of saute potatoes on top. It was delicious and very cheap and easy to make.

I remember once my dad making my brother and I choc-ice and chips. He got the idea from an advertisment on the TV and we dared him to do it one day so he did.............. it was absolutely delicious lol.
