Find some place to start up a Bonfire, invite some other 'hick-people' over and everyone just chill around the fire.
Throw in a grill and some guy with an instrement for music, and you have yourself a nice little 'hick-party'.
Add in tents and you have places to go and ... ummm.. have some 'hick-fun' with your date. :)

jump in the car and head somewhere romantic out of town for a romantic picinic or something.
I'm lucky cause I live in Tasmania I have the mountains and snow no more than 3 hours from home.

Do the same kind of things you'd each do on your own. Go on a picnic or BBQ, Go swimming, Go skating, Go bowling, Go for a walk or bicycle riding.
