I just smash the head with a meat tenderizer or a rubber mallet. Takes all the tedium out of it and actually gets a little therapeutic some days.
The other way (ala Alton Brown) is the slice the head across the center and squeeze them out.

Soak them in hot water the skins will peel easily. Or you can crush them with the flat blade of the knife and the skin will crack and the clove will pop out.

If you crack them open with thebottom of a frying pan, you can pull them out easier, make sure you cut the top off first. Not the rooted-fuzzy end. Don't smack it...kind of lean all of your weight on the pan while it is rested on the Garlic. You'll here the individual cloves burst/crack. Don't by extra utensils to throw into your junk drawer...rubber tube... hmph.

You can use your chef's knife and after laying the garlic cloves on the cutting board, put your knife on top and put your weight down on the cloves, pressing hard. This should do it.

Break open an entire head of garlic.
place the cloves in a round bowl, and place the identical
kind and size of bowl on top and shake well. The skins
REALLY do come off.
I saw this tip on foodnetwork and have used it ever since.
good luck

get one of those garlic peelers. They look like a tube. You can buy them at Trader Joe's and kitchen shops.
