2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
4 overripe bananas
1 cup sugar
3/4 cup unsalted butter (1 1/2 sticks) melted and cooled
2 large eggs
1 teaspoon pure vanilla extract
1/2 cup pecans, finely chopped
Confectioners' sugar, for dusting

Preheat oven to 350 degrees F and lightly grease a 9 by 5-inch loaf pan.
In a large bowl, combine the flour, baking soda, and salt; set aside.

2.Mash 2 of the bananas with a fork in a small bowl so they still have a bit of texture. With an electric mixer fitted with a wire whisk, whip the remaining bananas and sugar together for a good 3 minutes; you want a light and fluffy banana cream. Add the melted butter, eggs, and vanilla; beat well and scrape down the sides of the bowl. Mix in the dry ingredients just until incorporated; no need to overly blend. Fold in the nuts and the mashed bananas with a rubber spatula. Pour the batter into the prepared loaf pan. Give the pan a good rap on the counter to get any air bubbles out.

3.Bake for about 1 hour and 15 minutes, until golden brown and a toothpick inserted into the center of the loaf comes out clean. Don't get nervous if the banana bread develops a crack down the center of the loaf; that's no mistake, it's typical. Rotate the pan periodically to ensure even browning.

4.Cool the bread in the pan for 10 minutes or so, and then turn out onto a wire rack to cool completely before slicing. Toast the slices of banana bread, dust with confectioners' sugar, and serve.

Banana Bread
INGREDIENTS:

DIRECTIONS:
1. Preheat oven to 350 degrees F . Lightly grease a 9x5 inch loaf pan.
2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Preheat oven to 350. makes 1 regular loaf or a couple mini pans
1/3 c shortening
1/2 c sugar
2eggs
1 3/4 c flour
2 tsp baking powder
1/4 tsp soda
1/4 tsp salt
1 c mashed bananas (abt 2 large overripe ones)
1Tb vanilla
1/2 c chopped nuts..walnuts, pecans - your favorite
1 c choc chips mini or regular semi sweet chips
Cream shortening, sugar, egg. Put dry ingredients in a bowl and sift together. Add dry ingredients to creamed mixture alternating with the mashed bananas. Stir in choco chips and nuts at the very last.
Grease your bread loaf pan or two mini pans. Pour in and bake abt 30-45 minutes. Let cool in pan 5 minutes or so and then turn out onto a rack. Enjoy. I started making this with chocolate chips and now my spoiled husband doesn't want it any other way! YUM. (you could spread cream cheese frosting atop of loaf when cooled) (sliced and toasted, in toaster OVEN smothered in butter is also a treat!)

Brown Sugar Banana Bread:
INGREDIENTS:
1/2 cup butter, softened
1 cup brown sugar
2 eggs
1 tablespoon vanilla extract
4 very ripe bananas, mashed
2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup chopped walnuts

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, cream together the butter and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition. Stir in vanilla and banana. In a separate bowl, sift together flour, baking powder, and salt.
Blend the banana mixture into the flour mixture; stir just to combine. Fold in walnuts. Pour batter into prepared pan.
Bake in preheated oven for 1 hour, until a toothpick inserted into center of loaf comes out clean.

Banana - Apple Bread

2 medium apples, cored and chopped
1/2 cup chopped walnuts


Ready, set, cook!


1. Preheat oven to 350F and grease 9x5-inch baking pan.

2. Cream butter and sugars, and beat in eggs. Stir in sour cream,
banana and vanilla.

3. In separate bowl, combine flour, baking powder, baking soda and
cinnamon. Gradually add to butter mixture. Gently stir in apples
and nuts.

4. Spoon into loaf pan and bake 1 hour.

heres my moms recipe shes been making it for years..

-----mix these together-----
-2 sticks of butter (melt)
2 c sugar
-4eggs

after you mix those together in a mixing bowl.. add these to it..

6-7 smushed bananas (you can smush them in a bowl)
1T. salt
2T.baking soda
2 1/2cups of flour..

stir it really good.
then pour the ingredients into bread pans..
cook them in the oven on 350. 50-60 minutes.
