A convection oven circulates the air within the oven itself. This tends to cook foods a bit faster, and much more evenly.

A convection oven works like a/c. it has a fan that pushes the hot air around the food, cooking it more quickly. A conventional oven heats all the air in the oven, it is slower. Convection ovens are good for baked items like cookies, cakes, pies, and breads. Conventional ovens work better for items like roasts and other meats.

Convection ovens use a fan to circulate hot air around the food that is in the oven.

They work alot faster and turn out a better baked item.

I've used both. I prefer Convection for the way things crisp up, however I find it difficult to use on all things that you'd put in the oven.

A traditional oven is easier to use, yet more difficult to get the desired results.

They both have their advantages, and disadvantages, so I guess it just depends on what you are wanting to cook.

conventional is the heat radiates from elements in the top and bottom, where as the convection oven has a fan to circulate the heat making it cook faster, where as something that takes about an hour in a conventional oven, whould take about 40-45 minutes in a convection oven.
ther is now on the market an appliance called a "tri-vection" which is conventional oven, convection oven and a microwave all in one.

Conventional ovens have one type of cooking method, thermal heat. Convection ovens use two types, thermal and convection heat. The fan in the back of the oven circulates the heat, cooking the food faster.
