Chocolate Chip Cookies
This is the chocolate chip cookie recipe I've been using ever since I was given the recipe by a friend at work, who is an excellent baker! My kids love these cookies and request that I make them often!
2/3 cup shortening
2/3 cup butter, softened
1 cup sugar
1 cup brown sugar, firmly packed
2 large eggs
2 teaspoons vanilla
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups semi-sweet chocolate chips
1 cup chopped pecans (optional)
3 dozen (depending on the size
1. Preheat oven to 375°F.
2. Cream together shortening and butter.
3. Add sugar, brown sugar, eggs and vanilla.
4. Blend in flour, baking soda, and salt.
5. Stir in chocolate chips and pecans.
6. Drop dough by rounded tablespoonfuls, 2-inches apart, onto baking sheet.
7. Bake 8-10 minutes or until lightly brown.
8. Do not over bake!
9. Cool slightly before removing to wire cooling rack.
10. To keep cookies soft, store in an airtight container with a slice of bread!

My favorite cookie is a recipe I used of Paula Deen's, from Food TV.com. I have tried them a few times, and they are so good. Here's the recipe.
2 (1-ounce) squares unsweetened chocolate
1 (14-ounce) can sweetened condensed milk
1 cup graham cracker crumbs, finely ground
1/8 teaspoon salt
1/2 cup chopped walnuts
1 teaspoon vanilla
24 shelled walnut halves
Walnut halves, to garnish
Preheat oven to 350 degrees F.
Using a double boiler, melt the chocolate in a medium size bowl. Add the milk and stir until the mixture thickens, approximately 5 minutes. Remove the bowl from heat and add the crumbs, salt, nuts, and vanilla and stir until well combined. Work quickly as the mixture will become stiff. Using a spoon, drop the mixture into rounded teaspoons onto a prepared greased cookie sheet. Place 1/2 a walnut on top of each cookie. Place cookies in oven and bake for 10 minutes. Remove cookies from oven and quickly transfer onto waxed paper to cool.

Chocolate chip cookies with extra chocolate chips. The Toll House recipe is a good recipe. You can get that recipe off of any bag of Nestle Toll House Chocolate Chips that you buy in the grocery store. Good Luck!!

(recipe may be halved)
2 cups butter
24 oz choc chips
4 cups flour
2 cups brown sugar
2 tsp soda
1 tsp salt
2 cups sugar
1 8oz Hershey Bar (grated)
5 cups blended oatmeal
4 eggs
2 tsp baking powder
2 tsp vanilla
3 cups chopped nuts(your choice)
Measure oatmeal, and blend in a blender to a fine powder Cream the butter and both sugars, add eggs and vanilla mix together with flour,oatmeal, salt, baking powder,and soda -add choc grated from hershey bar , choc chips and nuts
place two inch apart on a cookie sheet
Bake for 10 min at 375 degrees - makes 112 cookies

Oh you want recipes.... well the best one is on the inside of the Quaker Oats lid. To it you can add (instead of oats) macadamia nuts, crushed walnuts and chocolate chips. SOOO YUUUMMMIFUL!! Or, make a few Oatmeal Raisins or Oatmeal CRAISins, too! Ooohhh. I was gonna say the best ones are the ones that me and my daughter can smell cooking about an hour after we've fallen to sleep and my husband brings in to the room with some milk for me to eat. With one eye open. Good stuff. They're Pillsbury dough, not homemade though. Choc. chip.

Lemon Sugar Cookies
3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 cups granulated sugar
1 cup solid vegetable shortening
2 eggs
1/4 cup fresh lemon juice
Additional granulated sugar
Preheat oven to 350 F and grease baking sheets. Stir together flour, baking powder and salt. Set aside. In large mixer bowl, beat sugar and shortening until fluffy. Stir in dry ingredients, then lemon juice. Mix well. Drop onto prepared baking sheets, 2" apart. Sprinkle with additional sugar. Bake 8-10 minutes or until lightly browned.

these are one of my favorite cookies. they are really great for someone bored with the usual choco-chip or sugar cookies...i make them all the time!!!
Cardamom Crisp Cookies
INGREDIENTS:
* 1 cup all-purpose flour
* 1/2 cup white sugar
* 1/4 teaspoon ground cardamom
* 1 pinch ground cinnamon
* 1/4 teaspoon grated lemon peel
* 1/4 cup ground almonds
* 6 tablespoons butter
* 1 egg
* 2 teaspoons milk
* 1/3 cup granulated sugar for decoration
DIRECTIONS:
1. Sift together flour, sugar, and spices; stir in peel and almonds. Cut in margarine till mixture resembles coarse crumbs. Stir in egg and milk till mixture forms a ball; chill.
2. Preheat oven to 400 degrees F (200 degrees C).
3. Roll out to about 1/8-inch thickness. Cut into circles 1-3/4 inches in diameter. Place on ungreased cookie sheet; sprinkle with sugar. Bake for 6 to 8 minutes until edges are brown.

I love triple ginger cookies. Use a regular ginger snap recipe but add candied ginger and grated fresh ginger to the recipe. YUM!
