Well the way i like to make em is by having large flour tortillas and basically stuff them with scrambled eggs, cooked bacon, maybe some chives and either cut up tomatoes or salsa. Also some sour cream can be good too.

Breakfast Burrito
Recipe courtesy Juan-Carlos Cruz
Cooking spray
4 ounces chorizo
1/2 red onion, chopped fine
3 cloves garlic, crushed
1 (4-ounce) can chopped green chiles
1/2 cup chopped cilantro leaves
1 cup egg substitute (recommended: Eggbeaters)
4 (6-inch) corn tortillas
1/2 cup shredded low-fat cheddar cheese
Heat a medium heavy nonstick skillet and lightly spray with the cooking spray. Add the chorizo and break up into small pieces with a wooden spoon. Cook thoroughly. Drain grease if any has accumulated.
Add the red onions, garlic, green chiles and cilantro. Saute until the onions have softened, about 1 minute. Add the egg substitute. Stir with a wooden spoon until the egg substitute is scrambled and thoroughly cooked.
Warm the tortillas in toaster oven or on top of a stove burner. Divide egg substitute mixture equally among the 4 tortillas. Fold each tortilla up like a burrito or a cone and top each with 1/4 of the cheese.
Breakfast Burrito
4 slices LOUIS RICH Turkey Bacon
2 flour tortillas (7 inch)
2 Tbsp. KRAFT Shredded Sharp Cheddar Cheese
2 large egg whites
1 Tbsp. chopped canned green chilies
TACO BELL HOME ORIGINALS Thick 'N Chunky Salsa (optional)
COOK turkey bacon in nonstick skillet on medium heat 8 to 10 minutes or until lightly browned. Place 2 turkey bacon slices on each tortilla; sprinkle with cheese.
BEAT egg whites and chilies. Add to hot skillet. Cook and stir 2 minutes or until set.
DIVIDE egg mixture between tortillas; fold tortillas over filling. Top with salsa.

Bacon-Potato Burritos
8 bacon strips
1-1/2 cups frozen Southern-style hash brown potatoes
2 teaspoons minced dried onion
4 eggs
1/4 cup milk
1 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup (4 ounces) shredded cheddar cheese
6 flour tortillas (8 inches)
In a large skillet, cook bacon until crisp;drain on paper towels. Brown potatoes and onion in drippings. In a bowl, beat eggs; add milk, Worcestershire sauce, salt and pepper. Pour over potatoes; cook and stir until eggs are set. Crumble bacon and stir into eggs. Sprinkle with cheese. Meanwhile, warm tortillas according to package directions. Spoon egg mixture down center of tortillas; fold in sides of tortilla. Serve with salsa. Yield: 4-6 servings.

Almost anything is a good addition to eggs in a breakfast burrito. I like all of the other comments...I also love adding roasted Zucchini, onions, bell pepper, potatoes or rice and guacamole. Some cheddar or cream cheese is really good too!

1/2 lb. smoked sausage, cubed
1 med. onion, diced
1 med. bell pepper, diced
1 tomato, diced
1 tbsp. garlic, minced
1/2 tsp Greek seasoning
8 oz. shredded cheddar cheese
4 eggs
8 10" flour tortillas
Sauté all ingredients except eggs and cheese on medium high heat for 10 minutes. Add eggs; cook until eggs are done. Wrap in flour tortillas and add cheese.
Fold and top with picante sauce.
8 servings.

1 tortilla
2 eggs
1/4 cup salsa
1/4 cup refried pinto or refried black beans
shredded pepper jack cheese
smear beans on tortilla, put on salsa, scramble eggs and add, put pepper jack on top and fold. depending on size of tortilla, you may need more salsa or eggs.
