Creamy Parmesan Spinach:
3 boxes frozen spinach, defrosted
2 (3-ounce) bricks cream cheese
1/2 small white onion, finely chopped
2/3 cup grated Parmesan, 2 rounded handfuls
1 teaspoon coarse black pepper

Place spinach in microwave to defrost. Place boxes on a dish to defrost the spinach because it will leek. While spinach defrosts, place cream cheese and onions in a medium sauce pot over low heat. While cream cheese is melting and spinach is defrosting, continue forward with meal prep then return to spinach. When the cream cheese melts, add Parmesan and black pepper to the cheese. Drain spinach in clean kitchen towel, wringing it out until dry. Stir spinach into sauce, season with a pinch of salt, to taste, if necessary and let the spinach sit over lowest heat possible 10 minutes, stirring occasionally.

Baked Creamed Spinach
Yield: 1 Serving

Ingredients

10 Oz frozen spinach; chopped
4 Slices Bacon; finely chopped
1 onion; Finely Chopped
2 Tablespoons flour
1/8 Teaspoon pepper; fresh
-ground
1 Clove Garlic; finely minced
1 Cup milk
Salt

Instructions

Cook and drain spinach as directed on package. Saute bacon and onions
until onions are tender,
about 10 minutes. Add flour, seasoned salt, pepper and garlic. Blend
thoroughly. Slowly add
milk; cook and stir until thickened. Add spinach and mix thoroughly. Pour
into greased casserole
and bake for 20 minutes. Can top with parmesan cheese if desired.

I make this at Christmas time and everone loves it!

Spinach Gratin
4T unslated butter
4C chopped yellow onions (2 large)
1/4 cup flour
1/4 tsp nutmeg
1 Cup heavy cream
2 Cups milk
3 lbs frozen chopped spinach, defrosted 5, 10oz packages
1 cup parmesan cheese
1T kosher salt
1/2 tsp pepper
1/2 Cup gruyere cheese

Preheat oven to 425 degrees.
Melt butter in a heavy bottom skillet over medium heat. Add onion and saute until transparent about 15 minutes, add flour, nutmeg and cook stirring for 2 more minutes. Now add cream and milk and cook until thickened. Squeeze water out of spinach and add to sauce with 1/2 cup parmesan. Season with salt and pepper. Transfer spinach to baking dish and sprinkle with remaining parmesan and gruyere. Bake 20 mins or until bubbly - Serve immediately.

Creamed Spinach

3 tbsp. butter
4 tbsp. flour
1 1/4 tsp. salt
1 c. whole milk
1/2 c. sour cream - can be low-fat
2 tbsp. butter
2 tbsp. onion, minced
1/4 c. water
20 oz. frozen spinach, chopped
1/4 c. Parmesan cheese

Melt 3 Tbsp. butter in a small saucepan on Med-Low heat. Stir in flour and salt until creamed together. Stir in milk a little at a time. Increase the heat to Medium. Constantly stir with a whisk until mixture is thick and smooth.

Remove from heat and set aside.

Melt 2 Tbsp. butter in a 2 quart saucepan over Medium heat, add onions and cook until transparent. Add spinach and water to pan, lower the heat and cover. Stir several times until spinach is almost completely cooked.

When spinach is almost done, add white sauce, sour cream and Parmesan cheese. Stir well and simmer until completely blended.

EASY CREAMED SPINACH

1 pkg frozen spinach, thawed and drained
1/2 onion, chopped fine
2Tbs butter
1 can cream of mushroom soup, stirred smooth

Saute the onion in the butter until transparent. Layer spinach evenly in the bottom of a 2-qt. casserole. Spoon onions over the spinach, then top with the soup. Garnish with bread crumbs, parsley, or cheese with a touch of cayenne. Bake uncovered for 30 min. in a 350 oven.

Cream Cheese Spinach Dip

2 c. sour cream
1/2 c. finely chopped fresh parsley
1 c. mayonnaise
1/2 c. finely chopped green onions
3/4 pkg. dry leek soup (Knorrs)
1 tsp. dill weed
1 (10 oz.) pkg. frozen chopped
spinach, well drained and rechopped
Pinch of garlic powder

Combine sour cream and mayonnaise. Add soup mix and combine thoroughly. Add remaining ingredients. Mix well and refrigerate until serving time. Makes about 1 quart.

Creamed Vegetables:
Allow 1 cup White Sauce to 2 cups of cooked vegetables.
White Sauce
2 tablespoons butter
2 tablespoons all purpose flour
1 cup milk
1/4 teaspoon salt
1/8 teaspoon pepper

melt butter in small sauce pan. Slowly stir in flour; cook and stir over medium heat, 3 to 5 minutes after mixture bubbles. gradually stir in milk. Add seasonings. Cook stirring constantly, until mixture is smooth and thick and comes to a boil. Makes 1 cup

Thin White Sauce: follow above but use 1 tablespoon each of butter and flour

Thick White sauce: follow above but use 4 tablespoons each of butter and flour.

Add in your cooked spinach and serve. good luck
