this is a good one....Chicken Casserole. Ingredients are as follows.....6 boneless chicken breast...1cup of sour cream...1 can of cream of chicken soup....1/2 cup of water...1tsp lemon juice...1 stick of butter...20-25 ritz crackers.
first boil your chicken until done. Mix soup, water,sour cream , chicken and 3/4 of the crackers crunched up very fine to this mixture. Pour into greased casserole dish. Top with remaining crackers and pour melted stick of butter on top of that and bake @ 350degrees 30-45 minutes. taste very good.

Get some boneless chicken breasts or thighs. Cut into 1 inch cubes. Get a green,red and orange or yellow bell pepper. Core, discard the seed and the pith and into 1 inch cubes. Start some rice or pasta. Sautee the chicken in olive oil and garlic until browned on all sides. Remove from pand and sautee the peppers in olive oil and garlic (same pan). When peppers are almost tender add the chicken back to the pan and finish cooking with a1/2 cup of white or red wine (sweet or tart). When pasta is done drain and sprinkle with olive oil, salt and pepper. Add chicken mixture and bingo... A cheap easy meal. Serve with a rose or a medium red wine on the side and get a cheesecake for dessert.

Get boneless chicken breasts and thin them out by using a mallet that u can buy from any cooking stores. Then layer the chicken with prociutto, spinach and a bit of shredded mozzerella cheese. Roll up the chicken and tie it securely with a rope.
Then grill the chicken on a grill, just until the outside is cooked with the grill marks. After put it in a oven and season with salt pepper, lemon juice and white wine, and add capers if you prefer. Its delicious~!

This is a great recipe if you have a grill...
Make a marinade using extra virgin olive oil and a good mustard (I usually use a stone ground mustard - not your standard yellow mustard) - 1 cup mustard & 1/4 cup oil. Whisk it together.
Spread over your boneless, skinless chicken breasts and let marinade in frig. for 15 minutes to 1 hour.
Cook on the grill - 4 minutes on each side.
HINT: If you pound your chicken breasts before starting they will cook perfectly because they will all be the same thickness.

Go to the grocery store and buy a packet of Grill Mates Tomato Garlic. and Basil Marinade. Follow the directions on the back to make the marinade. Let the boneless skinless marinade for about 10-20 min. Put the chicken on the grill or in a pot on the stove until done. Serve with corn and white rice. A white Zinfandel would go well with it if you guys drink wine.

I made the following Artichoke chicken recipe for my family and they all LOVED it! It is NOT exactly health conscious though
4 Boneless skinless chicken breasts
1 can (14oz) artichoke hearts well drained and chopped.
3/4 C. Fresh grated Parmagian Cheese
3/4 C. Mayonnaise
Dash of Garlic powder
In a bowl combine the artichoke hearts, mayo, parm. cheese and garlic powder. Place chicken in a greased baking dish (I just sprayed with PAM). Spread with artichoke mixture. Bake uncovered @375 degrees for 30 minutes in the middle of the oven. Then move it to the broiler and brown for just a few minutes (keep an eye on it though so it doesn't burn)
Serve with some brown rice and veggie of your choice! ENJOY!
This dish is very rich but super easy

STOVE TOP® One-Dish Chicken Bake
1-2/3 cups hot water
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1-1/2 lb. boneless skinless chicken breasts, cut into 1-inch pieces
1 can (10-3/4 oz.) condensed cream of mushroom soup
1/3 cup BREAKSTONE'S or KNUDSEN Sour Cream
PREHEAT oven to 400°F. Add hot water to stuffing mix; stir just until moistened. Set aside.
PLACE chicken in 13x9-inch baking dish or 2-quart casserole. Mix soup and sour cream; pour over chicken. Top with prepared stuffing.
BAKE 30 minutes or until chicken is cooked through.
This recipe is really good. I've made it several times. I've used the chicken like it says. And I've used Turkey.

my favorite recipe for boneless chicken is to get a pack of lipton alfredo noodles and some fresh broccoli you can ethier cut the chicken up or leave it whole cook the noodles and the broccoli then mix together add the chicken and you have a quick easy and delicious meal

Stuff Boneless Chicken
1 whole chicken, boned (be careful not to pierce the skin, better yet, have your butcher do this for you, 2 to 3 pound)
For Marinade
3 tablespoons soy sauce
1 tablespoon sugar
2 tablespoons lemons
Stuffing
1/2 lb ground ham
1/2 lb ground pork
1/2 lb ground chicken
1 1/2 ounces raisins
1 tablespoon lemon juice
2 tablespoons soy sauce
1 teaspoon finely minced garlic
2 tablespoons breadcrumbs
1/4 cup chopped onions
2 raw eggs
2 teaspoons crushed black pepper
salt
3 hard-boiled eggs
4 ounces melted butter or margarine
2 pieces hot sausage, sliced lengthwise into quarters (pepperoni or Polish sausage)
Combine all marinaring ingredients and marinate boned chicken for 3 hours.
Combine all the ingredients for stuffing except hard-boiled eggs, melted butter and hot sausages and mix well.
Stuff the chicken with the mixture and the 3 hard-boiled eggs and hot sausages, taking care to arrange the eggs and sausages inside the chicken longitudinally (from neck to tail).
Sew the slits at the neck and the tail of the bird.
Place the chicken in a baking dish and brush with the melted butter.
Wrap in aluminum foil.
Preheat the oven to 350 degrees F.
Bake for I hour.
Remove aluminum-foil wrapper and continue baking until chicken is golden brown.
Serve with sauce.
Sauce: Drippings from chicken 2 tablespoons flour 2 tablespoons soy sauce 1 tablespoon finely minced garlic 2 tablespoons vegetable or corn oil salt to taste Collect drippings from the baking dish.
Add 2 tablespoons flour and one table- spoon soy sauce.
Set aside.
In a small saucepan, saute garlic in oil until brown.
Add the mixture of flour soy sauce and drippings.
Season with salt.
Cook about 5 minutes, stirring often.
Slice chicken and serve with sauce.

place chicken in pan, add salt ,pepper, minced onion or onion power and basil. coat both sides, add a can of diced tomatoes on top, place in oven at 350 for about 35-45 minutes it's according to how thick they are. Last five minutes add shredded mozzarella cheese. use mini ravioli in olive oil and garlic as side dish or maybe her favorite veg. Caesar salad also goes good with this, or some garlic bread. a nice red wine. get some nice cannnoli for dessert.
