Superstition.
Some (especially Jewish scribes) think they should not pronounce the name of God.
Some (especially Sacred Names groups) go the opposite extreme and insist that only the name of God (Yahweh) should be pronounced in referrence to God.

It comes from the commandment that you must not take God's name in vain. The Jews took this so seriously that they would not say it at all, but make some indirect reference instead. The spelling G-d is a reminder not to say it.
It also makes it very clear that it is not intended to be an English translation of God's holy name. If it were intended to represent God's holy name then whatever is written would have to be handled with special respect.

Since, they don't want to admit He can or does exist. So, when they have put God in a sentence they spell it g-d. They're Athiests perhaps, or they just don't want to make people think they have a believe in God. Some others might be so lazy that they don't want to spell God out...and a slash is easily quicker to draw than an "o". Though, I think with most do that for the first meaning...since they would rather stay away because of who and what they are...spiritually blind people.

There are thoes who feel that even writing the word God is a bit of a sin, like using the name of God in vain. So to get the message accros they write the word as G-d. I think it is a lot better than writing:
In the beginning #@% created... Don't you?

Some religions believe that you shouldn't spell out God's name.

Orthodox Jews do it, they are not to say or write god's name, and while god has a more specific name it has fallen out of use, so god is now the specific name

I don't spell it either way.
I spell it DOG!
OR also OMD! as in OH MY DOG!
ACTUALLY GOD is generic...the GOD in the bible does not allow HIS NAME to be known.
There are many GODS to believe in but he only want people to believe in HIM, he is really jealous and...also paranoid he does not want anyone using his REAL name...
So he just goes by GOD...
There are many and to say there IS not would be calling GOD a lier...
WHY?
Because HE even stated in his BIBLE that NO one shall worship any other god before him...
SO there HAS TO BE other gods/goddesses too...He does not want anyone to worship THEM!

I find it irritating as well. I have the respect to capitalize God and He, Him, and His, but it just starts violating language rules to censor letters or to type in all caps. I understand that you love and revere God, but where does it end? Ascii art?
