I like using ground beef because it's inexpensive, but I'm looking for some new menu ideas. Any suggestions. I'm looking for anything EXCEPT: spaghetti, meat loaf, hamburger helper, goulash, or teriyaki beef, or beef and noodles (have plenty of those).
Any other ideas out there that don't use those hard to find items or cost a lot?

I've just found a few great ideas for stuffed meatballs and stuffed hamburgers:
For the meatballs, use your favorite meatball recipe, form the balls slightly larger than normal.
Take a block of mozzerella cheese, cut into cubes
Poke a hole in the meatball, insert cheese cube, close meatball
so no cheese shows
Fry as usual, OR bake in a casserole dish at 400 degrees for 20
minutes till done.
For the stuffed burgers:
Make two thin patties for each burger
Fry some bacon and crumble
mix the bacon crumbles with your fav cheese
place a small ball of this on the center of one patty, and top with another patty.
Seal edges to form one hamburger, making sure no cheese shows at all.
Fry, grill, or bake as usual.
Because the "good stuff" is on the inside, you only need to top this burger with your fav veggies and condiments!
variation:
try chopped spinach and feta inside these burgers for a greek flair, YUMMO!

Aww, well, okay, promise I won't tell the cute hamburger helper dude.
This is soooo YUMMY! try this---->
brown up some beef & mix w/taco sauce
get those Pillsbury cresent roll things
cheese, tomatoes onion, taco sauce, sourcream.
-On your round stone or pizza tin, arrange crescents into a wreath shape with the wide parts toward the center (overlapping) and the tapered points toward the outside. Press the centers to flatten together- sounds hard but is easy.
Then spoon on top the ground beef mixture, then sprinkle w/cheese, tomatos, & onions on top, fold the crecent up on top around it and bake in oven until creasent roll is gloden brown.
I am sure you will like it and make the dough guy happy too ;)

We call this "beans & meat". I made it up because I don't like chili powder.
Brown your ground beef and fork into little bits. Add an equal amount of canned dark red kidney beans including the liquid in the cans. Add water to cover (if needed).
Simmer for a couple of hours until beans are soft. Watch to make sure there is plenty of water. Don't salt until you taste it.
Believe it or not, this is a delicious dish. It just gets better the next day if you have leftovers.

Belgium Meatballs:
1lb ground beef
1 med green pepper chopped
1 tsp chili powder
1 tsp salt
1/2 c milk
1 egg
1/4 c vegetable oil
1 lg onion finely chopped
1/4 c cornmeal
1 1/2 mustard
dash of black ground pepper
1/4 c flour
1 can canned tomatoes
combine beef,onion, grn pepper cornmeal and seasoning,milk, and egg,blend thoroughly;form into 12 balls,roll in flour,brown in skillet add remaining flour and tomotoes, cover and bake in 400 oven for 35 to 40 minutes or can be simmered in skillet on top of stove.
Maidrite Mixture:
1 c chopped onion
2 lbs ground beef
2 tblsp brown surgar
2 tblsp white vinegar
1 c catsup
salt and pepper to taste
1c tomatoe juice or 1 can anned tomatoes
Brown beef and onion together, add brown sugar vinegar,catsup,salt and pepper and simmer about 30 minutes, add tomatoed juice or canned tomatoes and simmer another 10 minutes then server over mashed potatoes or rice or noodles( of your choice).

Warm Taco Salad
My sons LOVE this dish and they both want the recipe when they move out.
Brown 1lb of hamburger
Add: 1/2 tsp cayenne pepper
1 clove of chopped garlic
2 tbsp ketchup
2 tbsp cider or white vinegar
2 tbsp oil
1 Tb worcestershire sauce
1/2 tsp sugar
1/4 tsp dry mustard
1/4 tsp hot pepper sauce
14 oz can of kidney beans
Cook mixture on low/med for about 15 mins, til beans are thoroughly heated.
In large bowl put:
1 head lettuce, chopped
1/2c chopped celery
1/2c " green pepper
1/2c " green onions
1/2c shredded cheddar cheese
1c diced tomato
250grams Taco chips I prefer Nacho ones. (It's the large bag if you're not familiar with grams.)
Toss hamburger mixture with salad mixture, break up chips and mix in just before serving (or they'll get too soggy.)
makes 5-6 servings

Swiss Hamburger
Crumble ground beef in a large skillet season to taste ( we usually use season salt , pepper, garlic powder and onion powder)
add chopped onion and chopped green pepper
brown mixture and drain the grease.
add sliced potaoes, canned tomatoes, and frozen peas.
add a little water or tomato juice to cover mixture. Put a lid on the skillet and simmer until potaoes are tender.
Voila! Swiss Hamburger
you can also do this in the oven once you have browned the ground beef mixture. Just add the same ingredients and cover baking dish (I like to use a roaster pan if I do it in the oven)with foil preheat oven to about 375 and cook til potatoes are tender.

Make kabob!
Beef
1/2 cup Thinly diced onions
a few chopped garlic cloves
pinch of black pepper and salt
1 table spoon flour
1 tsp of coriander
1 egg
mix all ingredients in a bowl and split in to what ever size kabobs you and and put on skewers and barbeque til the meat is thouroughly cooked!

Fresh Spinach With Ground Beef R
I found this in an old cookbook lent to me by a friend. It seemed like an easy comfort food recipe that could be prepared from ingredients that I usually have on hand, and wouldn't take a lot of effort on a tired night. Similar to ground beef stroganoff with spinach and bacon stirred in, my hubby loved it.
2 lbs spinach, washed and stems removed
1 lb ground beef
3 garlic cloves, minced
1 medium onion, finely chopped
1 cup beef broth
2 teaspoons beef bouillon granules
red pepper flakes, to taste
5 slices bacon, chopped
3/4 cup sour cream
salt and pepper
4 servings
1. Sauté onion and bacon until cooked.
2. Add beef and cook until brown.
3. Add minced garlic and spinach.
4. Cook for 3 minutes.
5. Add broth, bouillon crystals, red pepper flakes, and sour cream.
6. Season with salt and pepper.
7. This can be served with rice or noodles and topped with Parmesan Cheese

Persian Sloppy Joe
fry 1 onion chopped til browned
(optional: add chopped bellpepper & garlic)
add 1 1/2 lb grd. meat til browned
season with salt & pepper to taste &
2 tsp. turmeric while frying meat.
3 heaping tsp. tomato paste half through cooking meat brown tomato paste
enough to carmelize with meat then add about half cup water to start.
2tablespoons lemon juice (fresh or RealLemon concentrate). Lower fire to simmer.
Stir & cover. It should steam up to for additonal moisture but if too dry add small about of water to loosen and continue to simmer about 20 minutes total. should finish with sloppy joe consistency not soupy.
Serve on folded toasted white bread or buns.

This is also a base for other dishes.
- add one shredded potato & enough water to steam potato in simmering covered. serve over steamed rice.

-Or alternate base with beshamel sauce through spaghetti and bake. (This one I got from morroccan neighbor very long time ago.)

LATER -if the base works for you and you get the timing of rice dishes try the next option:
- Use base as filler for Persian rice called Polo (plou).
First rinse and soak rice in hotwater just 5 min. to swell then drain. Parboil 2 1/2 to 3 cups long grain rice( prefer Jasmine) 5 minutes on slow boil. Drain. Mix lightly with meat base. Heat bottom of large pot with enough oil to coat bottom and sides til it sizzles. take off fire. Lightly drop meat & rice into pot.
Take skewer and poke few holes through to bottom to open up steam vents in rice mix.
Bring to fire and bring up temp to get bottom hot again. Cover with cotton towel pulled up around lid and make it tight. Lower fire to lowest lowest flame and let steam for about 25 min. Watch this dish. Try not to lift lid but if you have to make it quick & open away from face and arms. If it seems done early, move off stove.
Serve with yogurt & gardinier/pickled veggies or jalapeno peppers if you like, and salad.
