I use burger, eggs, BBQ sauce, some bread crumbs or crackers not to many as it tends to dry out the burger, salt, pepper, garlic, HP sauce, or what ever sauce you normally use. Make them into patties and put in freeezer until you need them or in the frig to cool for at least 2 hours, this will help themfirm up and then you should not have a problem with falling apart or shrinkage either. good Luck. It has always worked for me, I had the same trouble long ago.

Work with your hamburger make sure you pat them real good. While cooking on grill let them sit long enough for one side to cooked and then flip. Once the other side is cooked then it should be easy to flip.
Want a good tasting hamburger idea? I make what is called salsa burgers. Very good! Use about 2 tablespoon of salsa. (I prefer the less chunky kind, it sticks together better.) Add a dash of salt and pepper. Use 2 teaspoons of chili powder. Mix all this in your hamburger and grill or fry has normal.
It makes for a great taste. Once you get the hang of it you can use less or more ingredients. Carefull with the salsa because if you use to much it won't stick together. You can add an egg to it to help make it stick.

Add a package of Lipton Onion Soup Mix to meat before making patties. This will not only hold them together, but will provide a wonderful flavor to the hamburgers.

I take my fresh beef and make it into a tight ball before I press it into a patty. After pressing out into patty size I push in around the outer edge patting it tight into the patty. Also salting the patty before you lay it on the grill will cause any grease to separate from the meat loosening the patty. Salt the top of your meat after laying it on the grill, after you flip it over salt the other side.

do not thaw the meat in the microwave or they will fall apart - otherwise just use fresh meat and handle it as least as possible. If all else fails lay foil on the grill before putting the burgers on. (you shouldn't be having this problem)

Mix meat with chopped onions, 1 egg, bread crumbs or oatmeal, worchestershire, pepper, seasoning salt, garlic, chili powder. When everything's well mixed, form into patties. Mine have never fallen apart - the egg binds them together.

DON"T over mis your meat. Try not to handle the meat too much. Being men you like to handle meat too much. the more you mix the more they will fall apart.
Don't add too much liquid.

when mixing you hamburger add one egg, & about 1 cup of of raw oatmeal, mush all together with your hands, they should stick together then, works for me. good luck.
