This is a personal recipe we came up with about 10 years ago... it's really yummy :)

16 cups tomatoes, peeled and diced
2 cups chopped onion
1/2 cup hot jalapeno peppers (abt. 4)
1 cup sweet red or yellow peppers
4 cups green peppers, chopped
1 cup vinegar
2 tbsp sugar (to taste)
6 cloves garlic
1/2 - 1 tsp cayenne pepper
1/2 - 1 tsp chili powder
1/2 - 1 tsp chili peppers
oregano
basil
rosemary
garlic powder (optional)
1 tbsp salt (optional)

Simmer until thick (2-3 hours minimum).

Process in mason jars. Leave 1/2 inch head room.
Process at least 20 minutes.
