there is sulphates which some people are allergic to highly .,. it is for protection but all wines can get spoiled but it usually turns into vinegar once opened.. know ur sources.. like woodys wines with woodruf can get moldy to start with if ur doing home made wines..same as bottling or canning foods.. it can get botholism but usually the sulphur and alcohol kills it .. sugar however can be a bad culprit to spoilage..
