It is not a stew, it is a soup and a long time comfort food in my family for generations - especially if we were feeling poorly, potato soup was always the remedy. Here's the recipe, and it is wonderful.
Serves 2
2 medium size potatoes, peeled and diced
1 large onion, minced
2 TB of butter
2 cups of milk
salt & fresh black pepper to taste
Cover diced potatoes & onions barely with water, and at least 1 ts salt. Bring to a boil, and simmer gently until the potatoes are fork tender. Drain well, add milk and butter, bring to a boil and simmer for about 5 minutes to meld flavors.............remove from stove, mash some of the potatoes with a fork just to break them up a bit to add some texture to the soup. Serve with a sprinkling of minced parsley and plenty of black pepper. Delicious!

Creamy Veggie Potato Stew
INGREDIENTS:
3 quarts water
8 large potatoes, peeled and sliced
4 large carrots, diced
2 stalks celery, chopped
2 small onions, chopped
1/3 cup butter
2 tablespoons all-purpose flour
1 1/2 teaspoons salt
1 teaspoon ground black pepper
1/4 teaspoon paprika
2 cups heavy cream
DIRECTIONS:
In a large saucepan over medium heat, heat the water and stir in the potatoes, carrots and celery. Cook 15 minutes, or until tender but firm. Remove from heat. Drain and set aside, reserving liquid.
Place the onions and butter in the large saucepan. Over medium heat, slowly cook and stir 10 minutes, or until the onions are tender. Mix in the flour, salt, pepper, paprika and heavy cream. Mix in the potato mixture. Continue cooking and stirring, adding the reserved liquid a tablespoon at a time, until the mixture has reached a desired consistency.

Potato Stew
INGREDIENTS:
* 1/4 pound salt pork, cut in 1-inch strips, or about 5 to 6 slices bacon, diced
* 1 large onion, cut in 1-inch chunks
* 4 to 6 green onions, sliced
* 1 1/2 tablespoons flour
* 2 bay leaves
* 1 teaspoon dried leaf thyme
* 1/4 cup dry white wine
* 3 pounds potatoes, cut in 1-inch chunks (red, yellow, or variety)
* 3 cups chicken broth
* 1/4 teaspoon pepper
* sweet ground paprika, optional
PREPARATION:
In a large saucepan or Dutch oven, cook the salt pork or bacon until crisp. Add onions and cook until they soften somewhat, about 4 or 5 minutes. Sprinkle flour over the onions, add bay leaves and thyme; increase the heat to high.
Pour in wine and stir to loosen brown bits from the bottom of the pan. Cook for about 2 minutes, or until wine has evaporated.
Add potatoes, broth, and pepper. Cover and bring to a boil. Reduce heat to medium low and simmer until potatoes are tender, about 45 to 60 minutes. Sprinkle with paprika, if desired. Taste and adjust seasonings. Remove bay leaves before serving.
Serves 3 to 4.

POTATO SOUP
Cut up celery and onion, add to water in large pot
Boil until vegetables are tender
Cut up peeled potatoes and add to water; boil until potatoes are almost done
Add sliced polish sausage, cook till heated through
Add a little butter and some milk, be careful not to curdle the milk
Add salt and pepper to taste
Turn down heat so you don’t curdle the milk and add Velveeta cheese until it has the cheesy flavor you like.
