Just do it. No one mentioned the Kennedy Space Center 1 hour away, Nickelodeon, Busch Gardens as well as The Holy Land Experience-- Orlando is truly a central location in Florida.
You need 7 days to at least set foot everywhere, 10 to not feel rushed. I'd break it up into 2 trips in 3 years.
Read mousesavers.com, allears.net, and disboards to learn how to beat the lines, the crowds and get park hopper deals.
Don't like Disney? I still recommend staying on their property in one of the lower-key themed hotels because of the service, including roundtrip transportation from the airport thus saving on car rental. Animal Kingdom Lodge is not overtly Disney and it's tranquil.
Do it, or your kids will sublimate their disappointments and get back at you when they become teenagers.

Commercialism, thats all they hear, when you mention Florida, first reaction. When you get there, hordes of tourists, long lines, 'no bathrooms', very hot, humid. So the what sounds great, becomes over whelming, expensive, are we having 'FUN'!!!!!
