Generally, it's the meat drippings, mixed with flour to form a roux, and another liquid (milk, water, boullion).

Gravy is the drippings from the meat after it's cooked with a little flour..typically. Sometimes it has corn starch or something else to make the rue (starter gravy) and then broth.

pan drippings from the meat (plus the remains of the butter or oil if the meat was sauteed) plus a bit of a 1T or 2T of flour and enough liquid (water, stock, wine) to make the proper consistency.

"Some" gravy complements the food. Like anything else, in excess gravy will make it hard for you see your feet if you eat too much.
