I was watching the food channel not long ago, Emmeril Lagase was making some sort of dish and did pancakes. I thought, "OK, now I'm going to see if the big shot TV chef can get the first one right". Well, he poured the batter on his hot skillet, and imeadiately said, "Hey, the first one never works out, the pan seems to temper with that first pancake, I eat it anyway but I don't serve it" SO, what do I know? I guess that is a mystery for the Mythbusters???

It's the oil in the pan, and the way the heat affects it. When you first start cooking you have excess oil that gets absorbed by the first pancake. The more oil you use, the worse this effect is. Some pancake batters won't be affected by this, and they all turn out the same.
Don't use too much oil. Try taking a paper towel with a drop of oil and smear the pan with it. You'll have better results.

Pancakes have hit an "evolutionary" dead-end, and are still trying to use a defense mechanism against humans that obviously does not work; the first pancake will always turn itself "ugly" during the cooking process in an attempt to discourage the human from wanting pancakes. This is an attempt to save the rest of the batter.
But it always fails...

The temp. in the skillet is where it should be after the first one. Try using an electric griddle. You can set the thermostat and keep the heat even. I doubt it has anything to do with your cooking ability. Some of the worst cooks I know can do pancakes, and the some of the best ones I know have trouble with them.

Because the pan isn't as hot as it is whenever you cook all the other ones, so you leave it on longer to compinsate.
Just let the pan sit there for a while and heat up. I always had that problem and my mom told me this. Now all my pancakes are normal.

When you make the pancake batter are you adding a little oil to it? And you have to let the batter stand a while before you use it. Works well for me, all mine come out fluffy. Good luck

THey do dont they - maybe we are just impatient and do not allow the pan to heat to the right temperature. Wow - it's good knowing it just doesn't happen to me. Thank you

if you put the batter in right after you turn on the burner, the pan isnt hot enough.... i do that all the time
