I always see jars of Oranges in Liqueur in good stores at Christmas time, I would like to try making some, has anyone got a recipe for this.

This sounds a great idea, especially as a present for Christmas as you have lots of time. Also saves time and effort in to choosing presents, but people love homemade personalised pressies. There are lots of good recipes:

1. Peaches or oranges - scald in boiling water to remove skin 2. Poach for 10 minutes in water and 4oz sugar - chill 3. Marinate this in liquer or BRANDY and bottle, to make it different add a mint leaf or something to your taste to make the bottle good to look at and add a slight taste.
You could if you wanted dress your bottles to pesonalise them. You know what I mean, fancy cloth lids, name tags and labels. Actually, this is such a good idea, I MIGHT DO THIS MYSELF.
Another idea is to use fruit not commonly available e.g. quince.

GOOD LUCK, xxx If I do this, it will be the first year in my life when I have been organised at Christmas. lol

Alcohol is a preservative, so there is no need to do anything except peel the oranges and put them in a jar then add brandy or whatever until the oranges are completely covered. If they are not completely covered, they will go mouldy.

Add sugar to the brandy before pouring it in if you want sweetness. You would have to heat the brandy first though to melt the sugar.

Sometimes its also nice to add a few cloves or a stick of cinnamon into the jar.

There are some good recipes for this in Oded Schwartz's book "Preserving" ISBN 07513 0345 3.

The recipe he gives is:-
4lb clementines
2lb preserving sugar
2litres water
A spice bag consisting of a 2inch piece of stem ginger, 1 teaspoon cloves and a Clementine leaf (optional)
and for each jar
2 whole cloves
a few shreds of fresh ginger root
clementine leaves and
8 fluid ounces of Brandy

Method
Prick the clementines with a wooden skewer
Put sugar, spice bag and water in preserving pan and boil for 5 minutes,
add clementines and boil until soft.(about an hour)
Lift out fruit and arrange in hot sterilised jars with spices and leaves.
Bring syrup to the boil and boil rapidly until a temperature of 113 degrees centigrade or 235 F.
Cool to 75 C (167F)
Pour in enough brandy to half fill the jars, top up with syrup, and seal.

I have tried this, and it is important to use Brandy with as high a proof as possible - the lower proof "cooking" brandies you can buy in UK supermarkets won't do if you want your preserve to last.

If you are in a country that sells it, or you have a friend that can get you really high proof brandy it will produce much longer lasting results.

Cut up the oranges, put them in a mason jar, fill it up with brandy. when the orange absorbs the brandy after a couple days, pour out the old brandy/liquor, then pour in some fresh brandy. Not only do you have very powerful oranges, drink the juice, that has kick too!

They are kumquats, not oranges - and they will turn very bitter unless you use equal quantities of each, by weight, kumquats and sugar.
Dissolve sugar by heating very very gently in the least amount of vodka and water, adding scraped seeds from vanilla pod.
Remove from heat source, and stir in straight vodka.

Place kumquats in jar, and top with vodka mixture.
Close tight, place in dark cabinet, shake jar every few days.

Ready after 2 months.
Will keep for years.

I WOULD THINK ALL YOU DO IS DROP THE ORANGES INTO THE LIQUEUR OR BRANDY OR WHATEVER HARD LIQUER YOU WANT TO AND SEAL THE LID AND LEAVE IT SIT A WHILE.
