Boil water, add rice and little salt.
Cook uncovered on low heat till rice is tender.
Take care not to overcook the rice. Each grain of rice should be separate.
When rice is done, drain and add soom cold water and drain again using a large seive and set aside.
Heat oil in a kadhai / large pan and stir fry all the chopped vegetables.
Cook for 3-4 minutes.
Take care that vegetables are not overdone, they should be crisp.
Mix salt and pepper to taste.
Add the cooked rice and mix well. Now mix the soya sauce to it.
Cook the veg fried rice for 2-3 minutes and serve hot.

Ingredients
1 cup Long Grained Rice
1/2 a cup Shelled Green Peas
6 Shallots
1 small Leek
1 Carrot
2 Capsicums
1 big Onion
1 stick Celery
1 Bamboo Shoot 1 tablespoon of Bean Sprouts
1 tablespoon of Chilli Sauce
3 tablespoons of Groundnut Oil
1 tablespoon Soya Sauce
1 tablespoon of Tomato Sauce
Salt to taste
Method:
Chop shallots along with leaves, celery, leeks, carrots, bamboo shoots and capsicums into thin long strips.
Slice the onions.
Heat little oil and saute the onions and shallots. Add leeks, celery and saute.
Add vegetables and shallow fry a little. Add salt, soya & chilli sauce. Fry well. Keep aside for 10 mins.
In the meantime heat oil in another pan and fry washed rice for 5 mins till all the grains are covered with oil. Transfer rice to another container and add 1 1/2 cups of water. Place in pressure cooker (for 6.5, 7.5, 10 and 12 ltrs pressure cookers use 2 cups of water) cook the rice for 8 mins.
Add fried vegetables and tomato sauce to the cooked rice and mix well.
Garnish with a sprinkle of pepper (black) and a little vinegar.
Best eaten with Soups. Serve hot.

get nice basmathi rice cooked and overnite in fridge
fry the vege, add in the rice ..
add any soya sauce , a dash of pepper and toss in an egg lastly ..

choose vegetables that would accentuate your fried rice.. i suggest carrots ...coz it gives the rice a variety...and the crunchiness of a carrot will give you time to chew and savor the taste.. add a moderate amount of garlic and you can put left overs into it too..
it is better if you put left over rice in the fridge over night for minimizing over cooking it.

seems like uve got some great recipes to try however one tip i learnt living in asia, cook the rice the day before, spread it thinly on a tray and let it dry overnight, this stops the rice from becoming gluggy wen u fry it, enjoy!!
