Hey Chef,

FOLLOW MOJO AND ELK'S RECOMMENDATION TO THE LETTER!

Their way is the only way. (I would add, "put it in a clean container, put the container in the sink.")

If you need in a hurry, go to the store and buy fresh!

If that sounds expensive, do it the other ways mentioned and when your friends and family are all sick, tell them you saved money by using the frozen stuff, thawing it in a sink of warm water!

Please don't invite the three of us over for dinner! We are ordering out!

Take it out of the freezer?

LOL. Sorry. Put it in the sink (make sure the sink's clean!!!) and run COLD water over it. Make sure to keep the water cold and running to avoid bacteria build up. It will thaw out without being rubbery, like it would if you used a microwave (DON'T use the microwave!!!), though 12 lbs. will take awhile. I hope you don't need it right away.

Do you need to do it quickly? If so, use a microwave. Another (not so quick) way is to do it under COLD RUNNING water. Never hot, never standing. Or, you could just leave it in the fridge overnight. Trust me, any other way and you run the risk of Salmonella and other bacteria possibly ruining your dinner.

cold water, not sure why it works but it works, put cold water in the sink and put the chicken in the sink, it will defrost faster than warm or hot water and your meat stays fresh
