I cook a lot based on the weather. Just using chicken as a base, you could try the following:
Really hot and don't want to turn on the oven?
Chicken shish kebabs with couscous and a green salad.
Grilled chicken breasts stuffed with bleu or feta cheese and ham served with a green salad with dried cherries, chopped apple, pecans and bleu cheese or feta cheese
Chicken satay out on the deck with some Thai noodles and a pitcher of Sangria
Fall hits and you want to have "football" food?
Grilled chicken breast sandwiches on toasted french rolls with hummus and lettuce on them. Then do some finger foods that he can eat in front of the TV as you watch the game.
Chicken and Corn chowder with bratwursts
As the weather gets cooler:
Baked chicken breasts with stuffing underneath and provolone on top
Chicken parmesan
Chicken scallopine with lemon wedges over thick noodles with Alfredo sauce

Get: 2 pcs chicken fillet (or l large), small can of flaky tuna, bottle of pasta sauce of your own choice, some pasta for 2, 2 smashed garlic
Then: Cook the chicken, n shread it (with 2 forks) set aside.
Put the garlic into hot olive oil for l min., pour in the flakes of tuna flakes, stir, add the shreaded chicken and pasta sauce and stir it for 4-5 min. add salt to taste. boil the pasta till al dente, serve the sauce over it. Enjoy with glass of wine) should not take more than 20 mins. to prep. Bon apetito!!

How about some easy Pad See Ew...from Thailand, It is SUPER easy to prepare..you don't have to have a wok, but GAS stoves are priceless! Follow the instructions perfectly and subsitute the chicken (Gai) for the pork (Moo).
I have cooked this prob 8 times and it's a winner.

chicken cacciatore1 cup chopped onion
1 cup chopped green bell pepper
3 medium cloves garlic minced
3 tablespoons olive oil
2 cans (14.5 ounces each) stewed tomatoes
2 teaspoons leaf oregano, crumbled
2 teaspoons salt
1/2 teaspoon pepper, or to taste
1 bay leaf
1 chicken, about 3 pounds, cut up
3/4 cup dry red wine
PREPARATION:
Heat olive oil over medium heat in a large skillet. Brown chicken on all sides in hot oil, about 10 minutes. Remove chicken and drain off excess grease, leaving a tablespoon or two. Add chopped onion, green pepper, and minced garlic to hot skillet; sauté until onion is tender.
Stir in tomatoes, wine, oregano, salt, pepper, and bay leaf. Add chicken back to sauce and bring to a boil. Reduce heat, cover, and simmer for about 45 minutes, or until chicken is tender. Discard bay leaf and serve with hot cooked spaghetti or other pasta.
Chicken cacciatore recipe serves 6.

Buy some fillet of flounder either frozen of fresh. Then prepare it for broiling by basting it with canola oil and season it with sea salt and pepper. It should take less than 20 minutes to broil. Do not forget to flip them over when broiling. Mmmmmm.
