Usually they're asking for a physical description, unless they specify something like ¿Cómo eres como persona?, or something of the sort, meaning, what kind of PERSON are you. But responses would include soy alto/-a, bajo/-a, gordo/-a, flaco/a, moreno/a...tengo piel claro (I'm light skinned/white), con ojos verdes (with green eyes), cabello castaño por los hombros (shoulder length chestnut-colored hair), etc.

¿Cómo eres? means
¿How are you? not as in 'fine, I'm doing OK,
but it is asking for a description of yourself --
it could be a physical description or what are
your likes and dislikes.
¿Cómo eres?
Soy rubia (I´m blond)
medium height (estatura mediana)
tengo ojos azules (I have blue eyes) etc
or
¿Cómo eres?
I'm lots of fun (Soy muy entretenida)
friendly (amigable)
I love music, all kinds (me encanta la música, todo tipo)

Como eres means How are you, but how are you as in how you are, like your personality, so you would answer it depending on what type of a person you are, if you are sporty say soy deportista, yeah hope you get my point

I suspect that someone is really trying to ask, "How are you?" as in a polite greeting using an English/Spanish dictionary to translate.
The correct way to ask, "How are you" in Spanish is: "Como estas," or (formal) "Como estad usted."
"¿Como eres?" is literally asking, "how are you," but really asking the question, "What are you like?"

Soy guapo, alto, gordo... With an adjective describing yourself, something that is about your physical description that will not change.

It means what do you look like?, what are you like?, soy.....describe yourself physically ( appearance) and charcater traits ( personality).
