Now when you are pickeling banana peppers and putting them in a can you will need:
Vinegar
Salt
Pepper
Black Pepper balls
A Can
Banana peppers
1. Cut the banana peppers into desired size then put into the can
2. Add Vinegar, Salt, Pepper and pepper balls
3. Seal the can titely and keep closed for 1 day
4. After 1 day they should be very tastety

PICKLED BANANA PEPPERS
Use hot or sweet (or a combination) of banana peppers. Put 1 slit in the side of each pepper (so liquid can enter). Pack peppers uniformly in jars.
Bring to a boil a brine made of:
1/2 tsp. turmeric1/2 tsp. salt
1/2 c. honey
1 tsp. pickling spices
1/2 c. water
Bring to a rolling boil and pour over peppers in jar; seal.
Prepare one jar at a time so that the brine will continue boiling.
Process in a boiling water bath for 10 minutes.

You can pick up a recipe book next to the canning jars at the store,most of the recipe books you buy have the old timers recipes for pickling peppers,pickles and everything else you can can.

Hmmmmm not sure if that would sour them or not. But I love sweet bananna peppers. I would say try it, and then taste, if it's not bad... go for it.

I just used a recipe from the county extension office, 5 cups vinegar, h20, canning salt, garlic & sugar. Boiled it, poured over the peppers then processed in a water bath canner for 10 minutes.
If you don't want them too sour then add more sugar.
