Just use the standard recipie that serves 6 and make 8 batches. Bake each batch in one large pan and cut into squares. It won't look as pretty as using a popover pan, but I think your guests won't mind. To serve with it, I'd make boiled potatoes tossed with melted butter and parsley, and a green veggie like green beans or peas. Don't make gravy, just serve au jus instead. You will be surprised to find that roast beef is one of the easier dinners to make for a large crowd. For dessert, make a several huge trifles.

Chris 62 has the right solution and again for the number of guest you're going to need 4 to 8 pans to cook the pudding, so why not 4 to 8 popover pans. Interesting sides can be boring, peas or green beans are so predictable, but how about a cold side of pea salad of cooked fresh or frozen peas combined with minced white onion and a good diced cheddar cheese with a cool ranch or good mayonnaise dressing. Can be made way ahead and is pretty on the plate. I do not agree with Chris62 about the gravy..........you should have a nice gravy for the Yorkshire pudding, I think it is essential to the whole idea of a good English roast beef dinner. To me, it is amazing that you are attempting this feat, and believe me, everyone is going to enjoy themselves and think you are amazing too.

go to www.recipezarr.com it has the recipe for yorkshire pudding u can change the serving size for 45 people and it will tell you exact measurments. Hope this helps. It also suggest a few things to serve it with.

As far is what else to serve with it, I'd go with some green beans, some glazed carrots, a potato casserole of some sort with lots of cream and cheese, maybe some creamed spinach. Happy cooking!

Is that 5 or 6 roasts? I'd make individual Yorkies (popovers). Use glass pyrex custard cups or several "popover" pans. Best served hot. No veggies?
