This recipe is a big hit with my family. No one will ever guess it is made with the help of some Hamburger Helper. I call it my Mexican Rice Dish. Here's the recipe:
1 box Cheesy Enchilada, Taco, or Quesadilla Hamburger Helper
1 lb. ground beef
1 package of your favorite sausage sliced
1 med. Onion chopped (preferably red onion)
1 jar mild banana peppers chopped
1 jar (same amount as the banana peppers) green or black olives chopped
1 16oz can dark red kidney beans rinsed and drained
1 can of corn WITH the juice (not cream corn)
Cook the Hamburger Helper as instructed, EXCEPT brown the meat with the sausage and onions. Drain grease. When it comes time to add the liquids and rice, just put all the other ingredients in with it. It's that simple! Keep the same cooking times as instructed on the box. It's very important NOT to drain the corn. Top with sour cream and your favorite cheese along with some hot sauce.
*Don't bother with the topping mix in the box. It's not worth it!!!
It's great as a filling for burritos too. Man, it's good.

this casserole dish feeds me, my 7 brothers and sisters, and my parents, its cheap, easy and delisous, it takes about an hour to cook.
depending on the amount of people you are surving, or however big your dish is, you may want to change the amount of some of the ingredients. but for six:
six potatoes, thickly, (about a 1/4 inch) sliced
1 large, or two small cans of Cambles Cream of Mushroom soup
six or seven chicken breasts, thawed or frozen (if frozen it may take longer to bake)
shredded mozzerella or chadar (or both) cheese
boil the potatoes until about halfway done, not soft or they will get too mushy, so still firm, but not completly done, then put them in the dish. you can bread the chicken, we usually use a garlic bread mix, and seer it, place in the dish with the potatoes, evenly spread out, then pour cream of mushroom soup to completly cover dish and thickly spread the top with the cheese. bake about an hour in an oven at about 350-375 degrees. If you want to you mayadd a little bit of butter, only a little, or else the dish will look really greasy. it may sound gross, but it is really great, my dad made it up, so he usually does somthing a little different each time, if you are a creative cook then you can try, add a little paparka, or salt, but not too much, I'll bet there are a lot of other great choices, so if you don't choose this one, its alright, just try it one day...it really great!

Ingredients
boneless skinless chicken as much as you need for 6
1 package stovestop stuffing mix, (or peperidge farms 5 min)
1 can Cambells cream of celery soup
preheat oven to 350
make the stove top
put boneless skinless chicken in a 9x11 or 8x10
mix cream of soup with 1/2 can water in a bowl
layer stovetop over chicken
pour cream of mix over everything
toss in the oven for 35 minutes

Chef Jo's Apricot Chicken and Broccoli
ingredients:
Boneless, skinless chicken breast (enough for 6)
you may want to cube the chicken also....the kids love it
this way!
Fresh brocolli, approxiatemately 2 medium size heads
one large vadalia onion
One large bottle of Katalina style salad dressing
One large jar of apricot jelly or jam
One envelope of dry onion soup mix
One large can of apricot halves in syrup (heavy syrup makes this
a tad bit sweeter, but still VERY good)
Steps:
1. Preheat oven to 350 degrees
2. In large bowl combine Katalina dressin, apricot jelly/jam, juice from the can of apricot halves and envelope of onion soup mix.
3. Clean and chop broccoli into small to medium size bunshes
4. Clean and cube, if necessary, the chicken breast and add to the large bowl of marrinade.
5. While chicken marinades, chope onion julienne style (long thin strips) and add to marinade. If oinion make you "cry" light a candle before you start chopping....for some reason this works for me so it may not hurt to try :)
6. Pour chicken marinade and onion mixture into 9x11" baking pan
7. Gently pour 1/4 cup of water to very top of chicken and then place broccoli pieces on the very top.
8. Cover with tin foil and poke 4-6 small hole down the center.
9. Cook covered for 50 mins, until chicken is cooked through and mairnade is boiling.
10. After 50 mins., remove tinfoil and add apricot halves.
11. Cook for 10-15 more minutes, until apricots are warm to touch and starting to turn color.
12. This is best when it stands for 10 minutes with a cover!
Enjoy! This is best with other rice and noodle dishes, and looks really nice on the plate this way! I made this once for a bunch of friends that stopped by unespectedly and their kids loved it too!

One package of elbow macaroni
canned sliced mushrooms
frozen peas
mozarella cheeze
slices of carrots and potatoes
slices of susage or hotdogs
slices of onions
1 cube of chicken or vegtable stock
2 cups of warm water
salt, pepper
hlaf-cook the pasta, then drain it and put it in a pyrex or an oven safe baking plate and toss over the boiled susage/hotdogs and the veggies season with your favorite hebs, origano, garlic powder, salt and pepper. Then add the chicken or vegtable stock to the warm water and stir for a while until it dessolevs. Pour the water over the baking plate, cover with foil and let it bake for 35 - 40 minutes then sprinkle the face with cheeze broil until golden and ta da..

Brown hamburger with onions, make white rice, put in casserole dish,can cream of mushroom soup,can of milk,mix in curry,salt,pepper, bake for 15 minutes, done.

What about scalloped potatoes and a spiral cut ham for dinner? Extremely quick and you can dress it up by adding bleu cheese, feta or a sharp cheddar to the scalloped potato casserole.

a bit of meat beef if you have it cube it put it in a casserole dish add 2 carrots 1 onion and any other veg add enough meaty gravy to cover and cook for 1 hour on 200 or gas mark 4
or meatballs
1 pack mince
1 onion
1 slice bread (breadcrumbs)
1 egg
1 jar spaghetti sauce
pasta, or boiled pots
put mince in bowl add chopped onion ,egg,breadcrumbs mix with hands, make in balls place in casserole dish cover with tomatoes and cook in oven for 1 hour on 200 or gas mark 4

Like I just posted elsewhere, an easy and yummy casserole can be made with canned tuna, wide egg noodles (cooked and drained), cream of mushroom soup, milk and cheese. Cheap and easy!

turkey noodle casserole
Salt
1/2 pound extra wide egg noodles
1 tablespoon extra-virgin olive oil, 1 turn of the pan
3 slices bacon or turkey bacon, chopped
1 1/3 pound, the average weight of 1 package, ground turkey breast
1 pound white mushrooms, wiped, trimmed and sliced
1 medium onion, chopped
Black pepper
2 teaspoons dried thyme or poultry seasoning
1/2 cup dry white wine
1 cup chicken stock, available on soup aisle, eyeball it
1/2 cup heavy cream, 3 turns of the pan
1/4 teaspoon freshly grated nutmeg
2 tablespoons softened butter
2 cups grated Gruyere, about an 8-ounce brick
1 cup plain bread crumbs
2 to 3 tablespoons chopped parsley leaves
Bring a large pot of water to a boilfor your egg noodles. When it boils, salt the water and cook noodles to al dente.
Preheat a large, deep skillet over medium high heat. Add extra-virgin olive oil, 1 turn of the pan, and bacon or turkey bacon. Render the bacon fat 2 to 3 minutes, until bacon begins to brown at edges. Add meat and brown it, crumbling it with a wooden spoon. Move the meat over to 1 side of the pan and add mushrooms and onions to the opposite side. Cook mushrooms and onions 3 to 5 minutes, then combine the meat with veggies and season the mixture liberally with salt and pepper, then sprinkle in the ground thyme or poultry seasoning. Cook another 5 minutes then add wine. Deglaze the pan, lifting up pan drippings and bits. Stir in stock and bring to a bubble, then stir in cream and reduce the heat to low. Add nutmeg to sauce and stir. Taste to adjust seasonings.
Preheat broiler to high. Combine noodles with turkey and sauce. Grease a casserole dish with a little softened butter nested in a piece of paper towel then transfer the turkey noodle mixture to the dish. Top the casserole with Gruyere then bread crumbs. Place the casserole 8 to 10 inches from the broiler and brown 2 to 3 minutes until cheese is melted and the crumbs are brown. Remove from oven and garnish the casserole with parsley.
