Spicy Tuna Steaks
1/4 cup vegetable oil
4 cloves garlic, crushed and minced
2 tablespoons soy sauce
1/4 teaspoon dry mustard
3 tablespoons fresh lemon juice
1/2 teaspoon freshly ground black pepper
2 pounds tuna steaks
1 lemon, cut in
In a jar or bowl, combine oil, garlic, soy sauce, mustard, lemon juice and pepper. Shake or whisk to blend well. Rinse tuna steaks under cold running water and pat dry. Place the tuna in a shallow bowl; cover with marinade, cover the bowl, and refrigerate for 1 hour.Cook the tuna steaks on a lightly oiled broiler pan under a preheated broiler for about 4 to 5 minutes on each side, or until tuna is opaque. Serve with lemon wedges.

Marmitako (Tuna Stew)
8 pounds fresh tuna
11 pounds potatoes
2 large onions
6 or 7 green peppers
12 garlic cloves
1 cup olive oil
1 pound whole tomatoes, peeled
Peel the potatoes and cut into large square chunks. Drop chunks into a large pot of cold water. Mince onions, chop peppers, and sliver garlic. Pour the oil into a huge pot (about 12 quart size), and add onions, pepper and garlic. Sauté until onions are golden brown. Add whole tomatoes and continue to cook, mashing the tomatoes with a wooden spoon to reduce the whole mixture to a purée. When the tomatoes are partly reduced, add the potato chunks and mix well so the sauce gets into the potatoes. Add enough water to reach two fingers above the level of sauce and potatoes. Bring to a boil, then let the stew simmer gently. Cut meat into large chunks. When the potatoes are tender and sauce reduced to a purée, but not to a thick paste, add the tuna chunks. Cook over high heat for 5 minutes. Remove pot from stove, cover it, and let stand for 30 minutes

2 pounds tuna steak
1/4 cup brandy or dry vermouth
1/4 cup melted butter
1/4 cup lemon juice
3 tbsp chopped chives
1 tsp soy sauce
1/8 tsp garlic salt
pepper to taste
1/2 tsp marjoram
Mix together all ingredients except tuna steak and marinate the fish in the mixture for at least 1 hour before cooking. Turn the fish occasionally and be sure all surfaces are covered by the sauce. Place fish in well-greased grill and barbecue 4 to 6 inches above cooking coals until both sides are nicely browned (3 to 6 minutes to a side) and fish flakes easily when tested with a fork. While cooking, baste with any sauce left in the marinating dish.

Go for something different and cook it all the way through. Make a "from scratch" Mediterranean tuna salad.
Poach your tuna in a shallow pan containing water, splash of vinegar, pepper corns, salt and a half a lemon. Go for some fresh herbs too if you have them.
Separate your tuna with a fork to make some good meaty chunks. Add salt, pepper, olive oil, shallot, kalamata olives and lemon juice. Tuck it all in to a hollowed out baguette. It is refreshing and different and you wont even be upset that the tuna is cooked through.

Marinate it in soy sauce, fresh ginger, sesame oil, rice vinegar.
Lightly grill very quickly on BBQ or Hibashi or Gill on the oven.
Cut into thin slices and pour over a fresh salad of lettuce, yellow and red peppers. Add a drop of red hot sauce on each slice of tuna. Pour some asian salad dressing ( try japenese Wafu)
Decorate with some sesame seeds and here you go !

Why would you want to wreck the fresh tuna with a "recipe?" Just grill it for a minute or two on each side and ENJOY!!

boil pasta and asparagas in hot water.
in a large frying pan, put a spoonful of butter in a low heat.
add a spoonful of butter and mix them well.
add a cup of milk slowly and mix them well.
add salt pepper soup stock to your taste ( i recommend chicken commsome )
it's called white sauce
add canned tuna(drained) and asparagas
put pasta on a deep dish and pour the sauce.
it's called cream tuna pasta.

1. Tuna Pot Pie
This delicious tuna pie is made with tuna, homemade creamy sauce, mixed vegetables, seasoning, and pastry.
INGREDIENTS:
* 1/4 cup butter
* 1/2 cup chopped onion
* 1/3 cup all-purpose flour
* 1/2 to 1 teaspoon salt
* 1/4 teaspoon pepper
* 1/4 teaspoon garlic and herb seasoning blend or dash garlic and dried parsley
* 1/4 teaspoon paprika
* dash dried thyme, crumbled
* 2 cups milk
* 1 large can (12 ounces) tuna, drained and flaked, or 2 small (6 to 7 ounce) cans
* 2 cups frozen mixed vegetables, thawed
* 2 teaspoons Worcestershire sauce
* 1 cup shredded Cheddar cheese
* pastry for single 9-inch pie
PREPARATION:
In a large saucepan melt butter; add onion and cook over medium-low heat until tender. Blend in flour. Add 1/2 teaspoon salt, the pepper, herb seasoning blend, paprika, and thyme. Gradually add the milk, stirring constantly.
Cook, stirring constantly, until mixture is bubbling and thickened. Fold in the tuna, vegetables, Worcestershire sauce, and cheese. Taste and add more salt and seasoning if necessary. Pour mixture into a 2-quart baking dish.
Preheat oven to 425°. Roll out pastry to fit top of baking dish. With a sharp knife, cut several slits in the top crust. Place pastry on the baking dish; flute edges. Place the baking dish on a baking sheet in the oven. Bake for 35 to 40 minutes, until crust is browned and mixture is bubbly. Serves 4 to 6.
2. FRESH TUNA WITH SAUCE & PEPPERS (Italian)
19 oz. can Contadina peeled whole tomatoes
2 cloves garlic, minced
1 tsp. basil
1/2 tbsp. oregano
1 tsp. crushed red pepper (or more according to taste)
1 lg. bay leaf
1/2 tsp. black pepper
1 tbsp. chopped parsley
1 tsp. salt
5 bell peppers, roasted & peeled, cut into strips, seeds removed
2 lb. fresh tuna, cut into serving slices
Oil, enough to fry tuna
1. Roast peppers on open fire/or preheat broiler on high. Place peppers on foil and broil until skins are charred all over. Place in paper bag.
2. In large saucepan mash whole tomatoes with a potato masher.
3. Add remaining ingredients (except peppers, tuna and oil). Simmer for 30 minutes.
4. Sprinkle tuna lightly with salt and black pepper. Fry in oil until cooked.
5. Add tuna to sauce and simmer an additional 30 minutes.
6. Peel skins off of peppers, remove seeds and tear into strips.
7. Add peppers to sauce and tuna, mixing well. Heat through and serve with good, hot Italian or French bread. Serves 8
