Best recipe ever for Buttermilk Pancakes:
2 eggs
2 cups flour
2 Tbs. sugar
2 tsp baking pwdr
1 tsp baking soda
1 tsp salt
2 cups buttermilk
4 Tbs unsalted butter, melted
1/2 tsp vanilla
Cooking spray
Beat eggs until frothy, Add flour, sugar, baking pwdr, baking soda, salt buttermilk, melted butter and vanilla. Stir just until no lumps remain. Heat griddle, spray griddle, pour about 1/3 cup batter for each pancake.

PANCAKES
2 eggs
2 cups all-purpose flour
2 3/4 cups milk, *see note
1/4 cup vegetable oil
2 tablespoons melted butter
3 tablespoons sugar
1 1/2 tablespoons baking powder
1 teaspoon salt
Beat egg with hand beater until fluffy; beat in remaining ingredients just until smooth. Grease a heated griddle.
Pour about 3 tablespoons batter from tip of large spoon or from pitcher onto hot griddle.
Cook pancakes until puffed and dry around edges (tiny bubbles will begin to form).
Turn and cook other sides until golden brown. Flipping once should be enough. The first pancake isn't always the best one.
Note: Buttermilk, yogurt, or sour cream may be substituted for some or all of the milk.
This may cause the batter to be too thick or too thin; adjust accordingly by adding milk to thin or flour to thicken. When you use a sour ingredient, cut the baking powder by 1/2 tablespoon and add 1/2 teaspoon baking soda. If you don't have buttermilk, you can add powdered buttermilk to the milk (a good thing to have on the shelf).
Makes about 18 four inch pancakes.

Truck Stop Buttermilk Pancakes
INGREDIENTS:
5 eggs
1 1/2 cups milk
6 tablespoons butter, melted
5 cups buttermilk
5 cups all-purpose flour
5 teaspoons baking powder
5 teaspoons baking soda
1 pinch salt (optional)
5 tablespoons sugar
DIRECTIONS:
In a large bowl, whisk together the eggs, milk, butter and buttermilk. Combine the flour, baking powder, baking soda and sugar; stir into the wet ingredients just until blended. Adjust the thickness of the batter to your liking by adding more flour or buttermilk if necessary.
Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side. Continue with remaining batter.

Scratch means homemade, from real ingredients.
I have to ask, they seem so liquid, more like an apple pancake? I sure have made stacks of the following:
in bowl mix 1/2 cup flour
1 tablespoon sugar
sprinkle of salt
Add
3 tablespoons melted butter
1 cup whole milk (less at first)
2 eggs
Whisk together only until blended; better to have it slightly lumpy rather than over mixed and tough.
On hot griddle or frying pan, heat 2 teaspoons of oil and 1 tablespoon butter add a big spoonful of batter and tilt the pan to make a big circle. Fry until just golden, then flip and finish cooking. Serve with syrup.
I guessed at the amounts, it is like French crepes.

I make Sourdough pancakes
1 C warm milk
1 C Flour
1/2 C Sourdough Starter
2 eggs
2T sugar
1/4 C oil
Pinch of salt
1t baking soda
Mix milk & flour in glass or plastic bowl
add sourdough with wooden or plastic spatula or spoon
add eggs & stir well
add sugar, oil & salt blend well
add baking soda it will then rise
med hot skillet
