Please don't peel the zucchini. It adds to the moisture of the bread and by the way after you prepare it you can freeze it until you are ready to make the bread.

no don,t peel it as the colour will look better in bread.Just don,t great it to much as your bread will turn out to green in colour and strain the zucchini very well on paper tewels before adding it to you bread mix. Good luck

It isn't necessary to peel the zucchini...I never have and I've made lots of zucchini bread, my favorite being with walnuts and pineapple.

YES! Sometimes the skin will be a bit bitter. But for a bit of color, peel it thinly. Don't forget to deseed it.

No you dont need to .. also u can mix with Zucchini and carrot together. Its so DELICIOUS! Try my advice... Follow the recipe of what you have and add little carrot to it.
