Cherry Enchiladas

"Cherry Pie like you've never had it before! Cherry pie filling wrapped in flour tortillas, soaked overnight in a sweet liquid, then baked. I used to work at a bed and breakfast, and we would make this sometimes for catered luncheons. I added my own touch with the almonds."
INGREDIENTS:
1/2 cup water
1/2 cup butter
1/2 cup white sugar
5 (10 inch) flour tortillas
1 (21 ounce) can cherry pie filling
2 tablespoons white sugar
1/2 teaspoon ground cinnamon
1 tablespoon crushed sliced
almonds
DIRECTIONS:
1. Grease a 9x13 inch baking dish. Combine the water, butter and 1/2 cup of sugar in a small saucepan and bring to a boil. Place a few spoonfuls of cherry pie filling just slightly off center of each tortilla. Roll up and place seam side down in the baking dish. Pour the hot liquid over the 'enchiladas' making sure to coat the tops completely. The mixture will be watery. Cover and refrigerate overnight.
2. Preheat the oven to 375 degrees F (190 degrees C). Combine 2 tablespoons sugar, cinnamon and almonds in a small bowl or cup; sprinkle over the top of the enchiladas.
3. Bake for 35 to 40 minutes in the preheated oven, or until outside edges of the tortillas are golden brown. Let cool slightly before serving.

Lime Cream Pie
Another 5-minute miracle from Eagle Brand. The perfect refreshing summer dessert to keep you out of the kitchen !
prep time: 5 minutes plus chilling time
servings: 6-8
INGREDIENTS
* 1 can (300 mL) Regular or Low Fat Eagle Brand®
* 1⁄2 cup (125 mL) lime juice
* Green food colouring, optional
* 1 cup (250 mL) whipping cream, whipped
* 1 9-inch (23 cm) graham cracker crumb pie crust, prepared
INSTRUCTIONS
* Combine Eagle Brand, lime juice and food colouring if desired. Fold in whipped cream. Pour into prepared crust.
* Chill 3 hours or until set. Garnish as desired
Lemon Cream Pie: Substitute 1/2 cup (125 mL) lemon juice for the lime juice and yellow food colouring, if using, for green.

Cooked Elbow Macaroni, Diced Hot Dogs, and a jar Ragu or Prego Pasta Sauce. Mix all together, cover and bake for about 20 minutes to heat thru. 2 pkg. Frozen Spinach or chopped Broccoli. Cook in microwave oven following package directions. Place in 9 X 13 pan. Lay boneless and skinless chicken breasts on top of vegies. Mix 1 can Cream of Mushroom Soup, 1 cup Mayo ( not Salad Dressing) and a package of Hidden Valley Ranch Dressing Mix. Pour over chicken and vegies. Sprinkle with shredded Cheddar cheese and crushed Ritz crackers. Bake covered at 350 degrees F for about 14 minutes, then uncover and continue baking for another 15 minutes. Serve either with a green salad and bread. Make up some instant pudding, top with cool whip for dessert.

Honey Mustard Chicken
Chicken tenders
Honey mustard dressing
Potato chips, crushed
Roll chicken tenders in dressing then potato chips. Place on a baking sheet and bake at 400 for 8-10 minutes or until juices run clear when pricked with a fork.
Catalina Pot roast
1 2 lb chuck roast
small bottle of Catalina dressing
carrots, onions, celery, and mushrooms
Place cleaned and cut onions, carrots and celery in the bottom of a crock pot. Place meat on top. Add mushrooms and dressing. Add about 1/2 cup of water and cook on low 8-10 hours or until roast is done.

Chicken Bites With Honey Mustard Sauce
1 large bag of sour cream and onion chips (not the rippled kind)
1 to 3 lbs. of chicken tenders depending on how many ppl.
2-3 eggs beaten with water to thin.
1 stick melted butter
paprika
Crush chips to a fine consistency. Cut chicken tenders into 2-3 pieces. Dip chicken pieces into egg and water mixture then into chips patting firmly to coat. Set aside on baking sheet. Continue until all chicken pieces are coated. Drizzle the butter over the pieces with a spoon. Sprinkle with paprika.
350 degrees cook till golden
3/4 cup mayo
2 tbs mustard
2 tbsp honey
lemon juice
paprika and pepper added so that you see flecks all through the sauce.
The sauce is an art form. lol Start with these measurements and then make it to suit your taste buds.

Baked ham and mushrooms macaroni:
Ingredients:
250 g. of cut macaroni
200 g. of smoked ham
1 carrot, cut into 1/2″ cubes
3/4 c. of frozen sweet peas, thawed
250 g. of fresh buttom mushrooms, sliced
1 can of condensed cream of mushroom soup or
1 pack of powdered cream of mushroom soup
1 onion, chopped
1/4 c. of butter
1 to 2-1/2 c. of chicken or beef broth
1 tsp. of finely chopped parsley
salt and pepper
1 c. of grated cheese
Cooking procedure :
Cook the macaroni according to package directions. Drain and set aside.
Melt the butter in a saucepan. Saute the chopped onion until soft. Add the ham. Cook until lightly browned. Add the mushrooms and cook for about a minute. Add the carrots and peas. Pour in the broth. Bring to a boil. Cover and simmer for 2 minutes. Add the cream of mushroom soup. If using the powdered variety, pour only 1-1/2 c. of broth into the saucepan and use the remaining cup of broth to dissolve the soup. If using canned mushroom soup, use only 1 c. of broth. Cook, stirring, until well blended and the sauce has thickened. Season with salt and pepper.
Turn off the heat and add the parsley. Stir. Add the cooked macaroni and toss well.
Transfer to a baking dish. Garnish with the grated cheese. Cover with foil. Punch a few holes to let the steam out. Baked in a moderately hot oven, about 350-degrees Fahrenheit, for 15 to 20 minutes. Uncover and let stand for 10 minutes before serving with garlic-buttered toast.

I make this occasionally. It's fairly simple to make.
Texas Hash
INGREDIENTS:
1 pound lean ground beef
2 onions, chopped
1 large green bell pepper, chopped
1 (14.5 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
2 tablespoons chili powder
2 cups cooked rice
1 (8.75 ounce) can whole kernel corn, drained
salt and pepper to taste
3 slices processed American cheese

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart (8 inch round) casserole dish.
In a medium skillet over high heat, brown ground beef with onions and green pepper. Stir in diced tomatoes, tomato sauce and chili powder. Simmer for 20 minutes.
Stir cooked rice into the beef mixture. Mix in the corn, salt and pepper.
Pour the mixture into prepared casserole dish. Cut the American cheese slices in half and place over the top.
Bake in preheated oven for 15 to 20 minutes or until cheese is melted and bubbly.

Sloppy joes (i make mine from scratch: brown hamburger in onion til done, drain. Add a can of tomato soup (no water) and ketchup, mustard, bbq sauce, salt, pepper all to taste. Heat til hot through.
Tator tot casserole: brown hamburger (with no onion) til done, drain. Add a can of mushroom soup and heat throuh. In a 9 x 13 inch pan, arrange one bag of tator tots, a package of thawed broccoli pieces, the mushrrom soup burger mixture. Bake at 350 til hot through. Top with shredded cheddar cheese. Allow to melt and serve.

Sweet Hot Shrimp
Shrimp, peeled and patted dry
1 part flour
2 parts brown sugar
hot pepper flakes to taste
peanut oil
Mix flour, brown sugar and hot pepper. Coat shrimp with sugar mixture. Heat skillet to med-high with oil. Toss in shrimp, turn when browned.

Creamy Baked Four-Cheese Pasta
Bread crumb topping
3-4 pcs. bread(course crumbs)
1/4 C grated parmesan cheese
1/4 tsp salt
1/8 tsp ground black pepper
Mix in small bowl, set aside
Pasta and cheese
1 C (4oz) shredded Fontina
3/4 C 3oz) crumbled Gorgonzola
1/2 C (1oz) Pecorino Romano
1/4 C (2oz) grated Parmesan Combine cheeses in lrg. bowl;
1 pound penne
1 T plus ¼ tsp salt
2 tsp unsalted butter
2 tsp all-purpose flour
1 1/2 C heavy cream
1/4 tsp ground black pepper
Heat oven to 500.
Bring 4 quarts water to boil. Add pasta and 1 T salT
Melt butter in small pan over med-low heat; whisk flour in butter until no lumps, slowly whisk in cream, increase heat and simmer 1 min. Stir in 1/4tsp salt and pepper; cover and set aside.
Drain pasta when al dente leaving slightly weT
Add pasta to cheeses; immediately. pour cream mixture over, then cover bowl and let stand 3 min. Uncover bowl and stir to combine.
Transfer to 13x9 baking dish, then sprinkle with bread crumbs, press down lightly. Bake until topping is golden brown, about 7 minutes. Serve immediately.

Green chili burros
2 lbs stew meat
Two small cans diced green chilis
Flour tortillas
In a crock pot put two lbs of stew meat cover with water
add: seasoned salt pepper and garlic salt to your taste
let cook on low all day
put half cup of water in cup and add two teaspoons of flour add to crock pot stirring contantly to make a thin gravey. Gravey will be thin.
add two cans diced green chilies
roll in tortillas and serve with fork.
